  • 1 can (approx. 150g) canned mackerel
  • 1/2 stalk green onion
  • 1 handful (approx. 10g) dried anchovies for broth

  • 3 Tbsp soybean paste (doenjang)
  • 1 Tbsp fish sauce or soy sauce for soup (adjust to taste)
  • 1 Tbsp minced garlic

Cooking Instructions

First, let’s create the base broth for our delicious soup. In a pot, combine 2 liters of water and a handful of dried anchovies for broth. Bring to a simmer over medium heat and cook for about 10 minutes to extract the anchovy flavor. Strain the broth, discarding the anchovies. This broth will add depth to your siragegi soup.

Rinse the boiled dried radish greens thoroughly. If they feel stiff, you can soak them in cold water for a bit to soften them. Squeeze out excess water and chop them into bite-sized pieces, then place them in the pot. For the canned mackerel, drain off most of the oil, split it in half, and carefully remove the bones. Set aside.

Now, it’s time to marinate the radish greens with the seasoning ingredients. In a bowl, combine the chopped radish greens with 3 tablespoons of doenjang (soybean paste) and 1 tablespoon of fish sauce (or soy sauce for soup, adjust to your preference). Gently mix and massage the ingredients together with your hands, ensuring the seasoning coats the greens evenly. This pre-marinating step really enhances the soup’s flavor.
