A Special Pot Rice Made with Sweet Corn, Summer’s Delight
Delicious summer sweet corn, bought in bulk and then steamed and frozen, can be a fantastic ingredient year-round. This recipe utilizes sweet corn, often called the ‘flower of staple crops’ for its taste and nutritional value, to create a wonderfully flavorful pot rice. The combination of freshly cooked rice, rich butter, and sweet corn kernels offers a delightful culinary experience.
Main Ingredients- 1 ear of corn
- 30g butter (1 piece)
- 3 cups rice
Seasonings- 1 Tbsp soy sauce
- 1 pinch of salt

Step 1
Let’s prepare to make delicious pot rice with simple ingredients! All you need is fresh corn, savory butter, flavorful soy sauce, a pinch of salt, and well-soaked rice!

First, wash 3 cups of rice thoroughly under running water until the water runs clear. Soaking the rice for about 30 minutes will make the cooked rice even more delicious. (If you’re short on time, you can wash the rice well, drain it in a sieve, and let it soak dry.)

While the rice is soaking, prepare the corn. To separate the kernels, you can use a knife to gently scrape along the cob, and the kernels will come off easily. Separate the corn kernels from the cob. (I used pre-steamed and frozen regular glutinous corn, but you can substitute with canned corn kernels, super sweet corn, or any corn you have on hand.)

In a pot or rice cooker, add the soaked rice and an equal amount of water. Place the separated corn cob inside as well to prepare for cooking the rice. The subtle aroma from the corn cob will enrich the flavor of the rice.

Now it’s time to sauté the corn kernels. In a pan, add the separated corn kernels and 30g of butter. Cook over low heat for about 3 minutes, stirring occasionally to prevent burning. As the butter melts, it will infuse the corn with a rich, nutty flavor.

Once the buttery aroma begins to spread, add 1 Tbsp of soy sauce and a pinch of salt to season. Continue to stir-fry for another 2 minutes until the seasoning is well combined with the corn kernels. This creates a delicious sautéed corn mixture.

Add the sautéed corn kernels to the pot containing the rice and water. Now it’s time to cook the delicious buttery sweet corn pot rice.

Here’s how to cook the rice: First, bring it to a boil over high heat for 4-5 minutes. Then, reduce the heat to the lowest setting (barely simmering) and let it steam for 15 minutes. Finally, let it rest and steam for another 5 minutes to complete the perfect pot rice.
