Savory and Tender Stir-Fried Dried Shredded Squid with Butter

Ingredients- Dried shredded squid (Baekjinmi) 150g
- 1 Tbsp butter
- 1.5 to 2 Tbsp gochujang (Korean chili paste)
- 1.5 to 2 Tbsp sugar
- 1 Tbsp soy sauce
- 1 Tbsp corn syrup (oligosaccharide)
- 0.5 Tbsp minced garlic
- 2 Tbsp mayonnaise

Step 1
Today, I’ll introduce you to my go-to recipe for delicious and savory butter-fried dried shredded squid. It’s simple to make and tastes incredibly special.
Step 2
First, prepare 150g of dried shredded squid. Soak it in lukewarm water for about 3 to 5 minutes. Soaking for 5 minutes will make it even more tender, while 3 minutes is good if you prefer a slightly firmer texture. After soaking, drain the squid thoroughly using a sieve.
Step 3
Now, heat a frying pan over medium heat and melt 1 tablespoon of butter. Make sure the butter doesn’t burn and spreads evenly across the pan.

Once the butter is melted, add the drained dried shredded squid. Stir-fry it briefly for about 1 minute over medium heat, not high heat. This step allows the squid to absorb the buttery aroma, enhancing its flavor.
Step 5
Remove the squid from the pan temporarily. In the same pan, combine all the sauce ingredients: 1.5 to 2 tablespoons of gochujang, 1.5 to 2 tablespoons of sugar, 1 tablespoon of soy sauce, 1 tablespoon of corn syrup, and 0.5 tablespoon of minced garlic. Mix them well to create the sauce. You can adjust the amount of gochujang and sugar between 1.5 and 2 tablespoons to suit your taste. (I’ve tried both 1.5 and 2 tablespoons, and both are delicious, so feel free to adjust to your preference!)
Step 6
Pour the prepared sauce over the stir-fried squid. Mix well to coat the squid evenly. Taste the mixture, and then add the mayonnaise. I’m using 2 tablespoons as a guide, but you can start with 1 tablespoon, taste, and add more if needed. Mayonnaise adds a wonderful creaminess and richness.
Step 7
Once the mayonnaise is added, stir everything together until well combined. Then, continue to stir-fry over alternating medium and low heat for about 2 to 3 minutes, until the squid is glossy and well-coated. Be careful not to overcook it, as it can become tough.

Voila! Your savory butter-fried dried shredded squid is ready. The combination of butter and mayonnaise creates a depth of flavor that’s richer and more delicious than traditional versions. It’s perfect as a side dish, a satisfying snack, or even a great accompaniment to a cold beer!
