Summer Revitalization! An Easy Rice Cooker Recipe for Flavorful Butter Scorched Rice Samgyetang
Beat the summer heat with a special nourishing dish! Enjoy an easy-to-make Samgyetang featuring a rich butter flavor and a crispy scorched rice bottom, all prepared in your rice cooker. Experience the fantastic combination of crispy, golden scorched rice and tender, juicy chicken.
Main Ingredients- 1 whole chicken (approx. 530g)
- 2 onions (small)
- 7 cloves garlic
- 6 jujubes (red dates)
- 2/3 cup glutinous rice
- 1 cup green onion (cut into large pieces)
- 1 piece of astragalus root (huangqi)
Seasoning- 2 pinches of salt
- 2 pinches of salt
Cooking Instructions
Step 1
First, rinse the glutinous rice several times under cold running water until the water runs clear. Since it will be cooked directly in the rice cooker, there’s no need for prolonged soaking.
Step 2
Wash the chicken thoroughly under running water. Trim any excess fat or skin from the neck area with scissors for a cleaner presentation. You can also make a small cut into the thickest part of the thigh or slightly slit the middle of the chicken to help seasonings penetrate better during cooking.
Step 3
Spread the rinsed glutinous rice evenly on the bottom of the rice cooker inner pot. Place the prepared chicken on top of the rice. Generously stuff the chicken cavity with the halved garlic cloves, jujubes, and astragalus root to infuse it with aromatic flavors. Add the halved onions around the chicken. Finally, sprinkle two pinches of salt evenly over the chicken for initial seasoning.
Step 4
Now, add 600ml of water to the rice cooker. Toss in the large pieces of green onion as well. Close the rice cooker lid to prepare for cooking.
Step 5
Select the ‘Multi-cook’ or ‘Steam’ function on your rice cooker and set the timer for 60 minutes. Then, press the ‘Pressure Cook’ button to begin the cooking process. Please refer to your rice cooker’s manual as functions may vary by brand.
Step 6
Once the cooking cycle is complete, open the rice cooker! At the bottom, you’ll find a delicious, golden-brown scorched rice crust formed from the chicken juices and glutinous rice. Scooping up this delicious layer along with the chicken soup will enhance your dining experience.
