  • 2 Tbsp soy sauce (30ml)
  • 2 Tbsp rice wine (mirin or cooking wine) (30ml)
  • 2 Tbsp gochugaru (Korean chili flakes) (20g)
  • 1 Tbsp sugar (15g)
  • 1 Tbsp corn syrup or oligosaccharide (15g)
  • 1 Tbsp vinegar (15ml) – for that refreshing tang!
  • 1 Tbsp minced garlic (10g)
  • 1 Tbsp minced green onion (15g)
  • 1 tsp sesame oil
  • 1 tsp toasted sesame seeds (for garnish)

First, let’s prepare the glass noodles. For a perfectly chewy texture, soak the dried glass noodles in lukewarm water for at least 30 minutes, or until they are pliable. Once rehydrated, use kitchen scissors to cut them into 2-3 manageable lengths, making them easier to handle during cooking and eating.
