Perfect for those warmer days! We’ve made Buckwheat Bibim Guksu, a dish with a deliciously sweet and spicy sauce that will awaken your appetite. This refreshing noodle dish is ideal for beating the summer heat and is surprisingly easy to make at home.
Ingredients for Buckwheat Bibim Guksu- 1 serving buckwheat noodles (approx. 100-120g)
- 5 fresh lettuce leaves
- 3 fresh perilla leaves
Sweet and Spicy Perfect Ratio Sauce- 1.5 Tbsp gochujang (Korean chili paste)
- 2/3 Tbsp sugar (adjust to taste)
- 1/2 Tbsp minced garlic
- 1.5 Tbsp soy sauce
- 1.5 Tbsp perilla oil (or sesame oil)
- 1/2 Tbsp toasted sesame seeds
- 1/2 Tbsp vinegar
- 1.5 Tbsp gochujang (Korean chili paste)
- 2/3 Tbsp sugar (adjust to taste)
- 1/2 Tbsp minced garlic
- 1.5 Tbsp soy sauce
- 1.5 Tbsp perilla oil (or sesame oil)
- 1/2 Tbsp toasted sesame seeds
- 1/2 Tbsp vinegar
Cooking Instructions
Step 1
Bring a generous amount of water to a rolling boil in a large pot over high heat. Once boiling, add 1 serving of buckwheat noodles. To prevent sticking, gently stir the noodles occasionally with chopsticks as they cook for about 4 minutes. (Cooking times may vary depending on the noodle brand, so check the package instructions. Avoid overcooking to maintain a chewy texture!)
Step 2
Once the noodles are cooked, drain them in a colander. Immediately rinse under cold running water to remove excess starch and drain thoroughly. Rinsing with cold water helps to firm up the noodles and enhance their chewy texture.
Step 3
Wash the lettuce leaves, pat them dry, and thinly slice them into strips about 1cm wide. Lightly wash the perilla leaves, pat them dry, and slice them lengthwise into strips similar to the lettuce. Using fresh vegetables will greatly improve the flavor of your bibim guksu.
Step 4
In a small bowl, combine all the sauce ingredients: 1.5 Tbsp gochujang, 2/3 Tbsp sugar, 1/2 Tbsp minced garlic, 1.5 Tbsp soy sauce, 1.5 Tbsp perilla oil, 1/2 Tbsp toasted sesame seeds, and 1/2 Tbsp vinegar. Whisk well with a spoon or whisk until smooth and all ingredients are thoroughly combined, ensuring the sugar is dissolved. This is key for a well-balanced sauce.
Step 5
Place the drained, chewy buckwheat noodles and the sliced fresh lettuce and perilla leaves into a large mixing bowl. Add a portion of the prepared sweet and spicy sauce. (It’s recommended to start with less sauce and add more as needed to suit your taste.) Gently mix everything together with your hands or using chopsticks and a spoon, ensuring the sauce evenly coats all the ingredients. Be careful not to overmix, as this can cause the noodles to clump.
