I aim to create healthy options that are good for both me and my children. This time, I decided to make ‘Heukdang Seolgi’ (Brown Sugar Steamed Rice Cake) as a gift for a friend. In the past, making seolgi was a challenge, but now that I can make it successfully every time, I’ve gained the confidence to try more special variations like this one. Ingredients

  • 340g Wet-milled rice flour
  • 7 Tbsp Water
  • 24g Sugar
  • 25g Brown sugar
  • A pinch of sesame seeds
  • 3g Salt

Cooking Instructions

First, sift the rice flour with salt twice. This process makes the rice flour finer and smoother, contributing to a better texture in the final rice cake.

Gradually add water to the sifted rice flour while mixing to ‘moisten’ it. The right consistency is when the flour clumps together when squeezed but crumbles easily when gently pressed with a finger. Once properly moistened, sift the rice flour again for a more uniform and moist dough.

Divide the moistened rice flour in half into a bowl. To one half, add 24g of sugar and mix gently. Place this sugar-mixed rice flour into your prepared mousse ring or mold first. Ensure it’s spread evenly at the bottom of the mold.

In the remaining half of the rice flour, mix in 25g of brown sugar and a pinch of sesame seeds. Evenly layer this brown sugar and sesame seed mixture on top of the rice flour already in the mold. You can already anticipate the sweet aroma of the brown sugar!
