We all know broccoli is good for us, but sometimes it’s hard to enjoy, right? This recipe completely transforms broccoli with a uniquely delicious soft tofu dressing. The creamy, nutty dressing combined with the crisp broccoli and tender potatoes creates an incredibly satisfying flavor profile. Salad Ingredients- 1/2 head broccoli (approx. 100g)
- 1 medium potato
Creamy Tofu Dressing Ingredients- 1/2 block silken tofu (approx. 150g)
- 3 Tbsp toasted sesame seeds
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1 Tbsp soy sauce
- 1/2 Tbsp fish sauce (or anchovy extract)
- 1.5 Tbsp olive oil
- Pinch of black pepper
- 1/2 block silken tofu (approx. 150g)
- 3 Tbsp toasted sesame seeds
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1 Tbsp soy sauce
- 1/2 Tbsp fish sauce (or anchovy extract)
- 1.5 Tbsp olive oil
- Pinch of black pepper
Cooking Instructions
Step 1
Cut the broccoli into bite-sized florets. Peel the potato and cut it into similar-sized cubes as the broccoli. This ensures they cook evenly.
Step 2
Fill a steamer with water and bring it to a boil over medium-high heat. Once boiling, add the prepared potato and broccoli to the steamer. Cover and steam for about 10-15 minutes, or until tender when pierced with a fork.
Step 3
Gently remove the silken tofu from its packaging. Lightly press it with a paper towel to absorb any excess water. This helps prevent the dressing from becoming too watery.
Step 4
In a blender, combine the drained silken tofu, toasted sesame seeds (3 Tbsp), sugar (1 Tbsp), vinegar (1 Tbsp), soy sauce (1 Tbsp), fish sauce (1/2 Tbsp), olive oil (1.5 Tbsp), and a pinch of black pepper. Blend until completely smooth and creamy to create the savory tofu dressing.
Step 5
Once the steamed broccoli and potatoes have cooled slightly, transfer them to a large bowl. Pour the prepared tofu dressing generously over the vegetables. Gently toss everything together until the vegetables are well coated with the dressing. Transfer to a serving dish and enjoy your delicious and healthy broccoli and tofu salad!
