Key Ingredients- 1 head of fresh broccoli
- 1 Tbsp coarse salt (for washing)
- 1 Tbsp all-purpose flour
- 1 tsp salt (for blanching)
- 2 Tbsp vinegar
Cooking Instructions
Step 1
Today, I’ll guide you through the best methods for thoroughly washing and perfectly blanching broccoli, a wonderfully nutritious vegetable. Mastering these techniques will make preparing broccoli a breeze and ensure delicious results every time!
Step 2
First, select a fresh head of broccoli. Rinse it gently under running water. Then, using a knife, carefully cut the broccoli into bite-sized florets. Don’t discard the stems! They are also packed with nutrients and can be trimmed and used along with the florets.
Step 3
Now, let’s move on to the washing process. Fill a bowl with plenty of water and dissolve 1 tablespoon of coarse salt in it. Coarse salt is excellent for effectively removing any small insects or debris clinging to the broccoli’s surface.
Step 4
Once the broccoli is submerged in the salted water, add 1 tablespoon of all-purpose flour. Flour in water creates a slightly viscous mixture that acts like a magnet, attracting and binding to the fine dust and impurities hidden within the broccoli’s nooks and crannies, making it highly effective for a deep clean. Gently swirl the broccoli in the flour and salt water mixture to ensure a thorough wash.
Step 5
After washing, rinse the broccoli thoroughly with clean water multiple times to remove all traces of flour and salt. Now, we’re ready to blanch. Fill a pot with ample water and bring it to a rolling boil. Once boiling, add about 1 teaspoon of salt to the water. This salt will help enhance the broccoli’s vibrant green color and add a subtle seasoning.
Step 6
When the water is rapidly boiling, carefully add the prepared broccoli. Blanch it for a very short time, just 10-15 seconds! Broccoli is delicate and can easily become mushy and lose nutrients if overcooked. The key is to blanch it quickly, just until it slightly softens.
Step 7
As soon as the blanching time is up, immediately remove the broccoli from the hot water and plunge it into a bowl of ice-cold water. This ‘ice bath’ or ‘cold shower’ instantly stops the cooking process, preserving its crisp texture and maintaining its brilliant green color. Give it a good shake to drain excess water, and your perfectly washed and blanched broccoli is ready to enjoy!
