This is a special rice dish made with broccoli, a prime source of folate that aids brain activity. It’s a great brain food to make for children. Its delicious combination of crunchy anchovies and nutty walnuts makes it a delightful meal for kids.

Main Ingredients

  • 1 cup mixed brown rice and glutinous brown rice (using a standard paper cup)
  • 30 grams dried tiny anchovies
  • 50 grams fresh broccoli
  • 1/4 medium onion
  • 4-5 shelled walnuts
  • 1 tbsp mixed sesame oil and cooking oil (half and half)
  • 1.2 cups kelp broth (using a standard paper cup)

Cooking Instructions

First, rinse the brown rice and glutinous brown rice thoroughly and soak them in cold water for at least 30 minutes. It’s best to soak them in plenty of water to prevent sticking to the bottom of the pot. Separately, soak kelp pieces in fresh water for about 10 minutes to make a flavorful kelp broth. (Remove the kelp after steeping.)

Place the tiny anchovies in a sieve and gently shake to remove any debris or dust. Prepare the shelled walnuts. Heat a dry frying pan over low heat, then add the anchovies and walnuts. Lightly toast them for 2-3 minutes, being careful not to burn. This process helps remove any fishy smell and impurities from the anchovies.

Wash the onion and mince it as finely as possible. Trim the broccoli, cut into bite-sized florets, and finely chop the peeled stems to be used along with the florets.

In a pot or frying pan for cooking the rice, combine sesame oil and cooking oil in equal parts. Heat over medium-low heat. Once the oil is adequately warm, it’s time to start the flavorful sauté.

First, add the toasted anchovies and minced onion to the pot. Sauté until the onion becomes translucent and fragrant. Stir gently to prevent the anchovies from breaking apart.

Drain the soaked rice and add it to the pot. Stir-fry the rice until each grain is coated with oil and becomes translucent. Coating the rice grains in oil helps the rice cook up fluffy and separate.

Pour in the prepared kelp broth and bring to a boil over high heat. Once boiling, reduce the heat to medium-low, cover with a lid, and cook the rice. (If you feel the kelp broth isn’t flavorful enough, you can add the kelp pieces back into the pot while cooking the rice. Just remember to remove them once the rice is done.)

When the liquid has mostly evaporated and the rice is almost cooked, lower the heat to low. Distribute the prepared broccoli florets evenly over the top of the rice. Cover with the lid and let it steam for about 5-7 minutes. If you are using brown rice, it’s beneficial to steam it for a slightly longer period (about 10 minutes) to ensure a softer texture.
