Do you love soba noodles? They’re not only healthy but also incredibly delicious! Even when the wind starts to bite, it’s hard to give up on refreshing cold noodles. Today, I’ll guide you through making a satisfying and wonderfully textured soba noodle dish with beef brisket. This recipe is inspired by a popular cold brisket soba dish from a famous Japanese restaurant in Daegu, and I’ve recreated it at home for you to enjoy. It’s a clean, sophisticated flavor profile that’s perfect for any occasion.
Main Ingredients- 100g beef brisket
- 1 serving (100-120g) soba noodles
Cooking Instructions
Step 1
First, fill a large pot with plenty of water (about 2-3 times the volume of the soba noodles) and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add the soba noodles. Cook them for about 1-2 minutes longer than regular somen noodles. While the noodles are cooking, let’s prepare the garnishes like the leeks and chili peppers.
Step 2
For the leek, use only the white part. Wash it thoroughly and thinly slice it into fine pieces.

Remove the stems from the Cheongyang chili peppers and slice them thinly as well, to add a touch of spiciness.

Now, let’s prepare the beef brisket. Press the brisket gently with paper towels to remove any excess blood. Then, sprinkle 1-2 tablespoons of glutinous rice flour over the brisket and gently massage it in. This step will make the beef incredibly tender and chewy.

Blanch the seasoned brisket in boiling water for just a minute or two, until it’s cooked through. Coating it with glutinous rice flour before blanching enhances its rich flavor and delightful chewiness. Once blanched, rinse the brisket under cold water or immerse it in an ice bath to cool it down quickly. Set the brisket aside and focus on cooking the soba noodles.

Once the soba noodles are cooked to perfection, drain them in a colander and immediately rinse them thoroughly under cold running water. Gently rub the noodles with your hands while rinsing to enhance their chewy texture. Drain them well and arrange them neatly in your serving bowls.

Now, let’s make the refreshing broth. If you prefer a chilled dish, add a few ice cubes to your serving bowl. (If you want to enjoy it warm, you can use boiling water mixed with Tsuyu.) Mix Tsuyu and water in a 1:3 ratio to create a flavorful broth (e.g., 50ml Tsuyu + 150ml water). Feel free to adjust the amount of Tsuyu according to your preference.

Pour the prepared cold broth over the drained soba noodles in the bowl. Make sure to add enough broth to generously cover the noodles.
