Doenjang Jjigae is the eternal soul food for Koreans! When savory brisket is added, the broth’s flavor transforms completely. Today, we’ll share a special secret to making Brisket Doenjang Jjigae even more delicious. This recipe, featuring a rich broth and abundant umami, promises an unforgettable meal that will warm your body and soul on a chilly day.
Ingredients- Brisket slices: 7-8 pieces
- Onion: 1/4
- Green onion: 1/5 stalk
- Zucchini: 1/4
- Green chili pepper: 1
- Shiitake mushroom: 1
- Chives: a small handful
- Doenjang (Korean soybean paste): 1.5 Tbsp
- Anchovy broth or water: 1.5 cups (300ml)
- Gochugaru (Korean chili powder): 0.5 Tbsp
- Minced garlic: 1 Tbsp
- Tofu: 1/2 block
Cooking Instructions
Step 1
First, prepare the vegetables for the stew. Slice the 1/4 onion and 1/4 zucchini into bite-sized pieces. Cut 1/5 stalk of green onion diagonally.
Step 2
Remove the stems from the shiitake mushroom and slice it thinly. Finely chop 1 green chili pepper, removing seeds for a spicy kick. Wash and cut the chives into appropriate lengths; they will be added at the end.
Step 3
Now, prepare a ttukbaegi (earthenware pot) or a regular pot for cooking. Add 7-8 slices of brisket and cook them over medium-low heat in the preheated pot to render their fat. This will release the savory aroma of the brisket.
Step 4
Once the brisket is somewhat cooked and has released its fat, add 1.5 Tbsp of doenjang and stir-fry it together with the brisket. The doenjang will develop a deeper flavor as it fries in the rendered fat. Next, add the sliced green onions and stir-fry briefly to infuse their aroma.

After stir-frying the ingredients well, pour in 1.5 cups (300ml) of anchovy broth or water, and bring it to a boil over high heat. Boiling the broth will significantly enhance the stew’s depth of flavor.

To add a pleasant spiciness to the broth, stir in 0.5 Tbsp of gochugaru. If you prefer it spicier, feel free to add a little more.

Once the broth is boiling, add all the prepared onion, zucchini, and shiitake mushrooms. As the vegetables cook, the stew’s flavor will become even richer.
Step 8
When the stew is bubbling and the vegetables are tender, add the 1/2 block of tofu cut into pieces. Finally, add the prepared chives and chopped green chili peppers and simmer briefly. Your delicious Brisket Doenjang Jjigae is now complete!
