Ingredients

  • Brisket slices: 7-8 pieces
  • Onion: 1/4
  • Green onion: 1/5 stalk
  • Zucchini: 1/4
  • Green chili pepper: 1
  • Shiitake mushroom: 1
  • Chives: a small handful
  • Doenjang (Korean soybean paste): 1.5 Tbsp
  • Anchovy broth or water: 1.5 cups (300ml)
  • Gochugaru (Korean chili powder): 0.5 Tbsp
  • Minced garlic: 1 Tbsp
  • Tofu: 1/2 block

Cooking Instructions

Step 1

First, prepare the vegetables for the stew. Slice the 1/4 onion and 1/4 zucchini into bite-sized pieces. Cut 1/5 stalk of green onion diagonally.

Remove the stems from the shiitake mushroom and slice it thinly. Finely chop 1 green chili pepper, removing seeds for a spicy kick. Wash and cut the chives into appropriate lengths; they will be added at the end.

Now, prepare a ttukbaegi (earthenware pot) or a regular pot for cooking. Add 7-8 slices of brisket and cook them over medium-low heat in the preheated pot to render their fat. This will release the savory aroma of the brisket.
