How to Make a Crown Daisy Tofu Braised Rice Bowl – Recipe for Tofu Braising Sauce
Enjoy a quick and satisfying one-bowl meal by making braised tofu and mixing it with rice. It’s the perfect hearty dish for any time!
Main Ingredients- 2 bowls of cooked rice, warm
- 1 block of firm tofu (approx. 300g)
- 50g fresh crown daisy (tong ho)
- 1/2 onion
- 1 Tbsp minced green onion (white parts preferred)
- 1 sheet dried kelp (approx. 10×10 cm)
- 1 cup water (200ml)
Braising Sauce- 1/2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp minced garlic
- 1 Tbsp mirin (or cooking wine)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp perilla oil (or sesame oil)
- 1 Tbsp soy sauce
- 1 tsp oligosaccharide (or sugar)
- 1/2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp minced garlic
- 1 Tbsp mirin (or cooking wine)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp perilla oil (or sesame oil)
- 1 Tbsp soy sauce
- 1 tsp oligosaccharide (or sugar)
Cooking Instructions
Step 1
First, let’s prepare the delicious braising sauce. In a small bowl, combine 1/2 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp mirin, 1 Tbsp perilla oil, 1 Tbsp soy sauce, 1 tsp oligosaccharide, and 1 Tbsp minced garlic. Mix well until smooth, ensuring there are no lumps. This sauce base can also be used for other dishes!
Step 2
Now, let’s prepare the ingredients. Thinly slice the onion. Cut the tofu into bite-sized pieces, not too thin. Wash the crown daisy and cut it into similar lengths. We’ll cook the crown daisy briefly at the end to preserve its fresh aroma.
Step 3
Arrange the sliced tofu in a single layer at the bottom of a wide, shallow pot. Spoon the prepared braising sauce evenly over the tofu. Make sure to coat each piece well for maximum flavor penetration.
Step 4
Next, spread the sliced onions evenly over the tofu. The onions will add sweetness as they cook and also help prevent the tofu from burning. Then, carefully pour 1 cup (200ml) of water around the edges of the pot.
Step 5
Add the sheet of dried kelp to the center of the pot. Cover with a lid and simmer over medium heat for 5 to 10 minutes. The kelp will infuse the liquid, creating a much richer broth.
Step 6
Once the liquid has reduced slightly and the kelp has released its flavor, remove and discard the kelp sheet. (Be careful not to overcook the kelp, as it can become slimy.) Now, add the minced green onion and simmer for just 1 more minute. The green onion will add a refreshing note and enhance the overall umami.
Step 7
Finally, generously top the pot with the cut crown daisy. Cover the pot again and cook for just 30 seconds to 1 minute, until the crown daisy is slightly wilted. Avoid overcooking, as it will lose its vibrant color and fresh aroma.
Step 8
