Braising Ingredients

  • 1 stalk of green onion
  • 1/2 onion
  • 2 Korean chili peppers
  • 1 Tbsp sugar
  • 2 Tbsp chili powder (gochugaru)
  • 3 Tbsp soy sauce (jin-ganjang)
  • 1 Tbsp plum extract (maesil-cheong)
  • 1 Tbsp red chili paste (gochujang)
  • 1 Tbsp minced garlic
  • 6 fresh silver pomfret (palm-sized)
  • 200ml water

Cooking Instructions

First, prepare the Korean radish, which forms the base of the braised dish. Cut about 1/3 of a chunk of radish into thick, approximately 1cm slices. Larger pieces allow the sauce to penetrate better, resulting in a more flavorful dish.

Next, prepare the vegetables. Slice the green onion and Korean chili peppers diagonally about 1cm wide. Slice the onion into thick strips. The chili peppers add a spicy kick, while the onion provides sweetness and a refreshing taste.

The key to a delicious braised pomfret is the sauce. In a bowl, combine 1 Tbsp sugar, 2 Tbsp chili powder, 3 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp red chili paste, and 1 Tbsp minced garlic. Mix well until smooth to create your flavorful braising sauce. The red chili paste adds depth and umami.
