  • 2/3 Tbsp Saeu-jeot (fermented salted shrimp)
  • 1/2 Tsp Guk-ganjang (soup soy sauce)
  • 1.5 Tbsp Minced Garlic
  • 1.5 Tbsp Perilla Oil
  • 1 Scallion stalk
  • 1.3 Liters Rice Water

Broth Ingredients

  • 1 piece Dried Kelp (Kombu)
  • 12 Dried Anchovies (for broth)
  • 1 Korean Green Chili Pepper

Cooking Instructions

Step 1

Let’s start by making a flavorful broth. In a pot, combine the kelp, dried anchovies, and green chili pepper. Gently sauté over low heat. It’s important to toast them slowly to extract their flavors.

Next, prepare the dongchimi radish. Slice it into long, bite-sized pieces, similar to how you would prepare it for kkakdugi (cubed radish kimchi). You can adjust the size according to your preference.

Now it’s time to cook everything together. Add the prepared dongchimi radish, the strained broth from the sautéed ingredients (discard the kelp, anchovies, and chili pepper), fermented shrimp sauce, soup soy sauce, minced garlic, perilla oil, and rice water to the pot. (We’ll add the scallions at the end!) Bring it to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for about 1 hour and 10 minutes, or until the radish is tender and cooked through. Spooning some of the broth over the radish occasionally will help the flavors meld beautifully.

Once the radish is tender with a slight crispness, it’s almost ready! Finally, add the finely chopped scallions (rinsed and sliced) and stir gently one more time. Your delicious braised radish with fermented shrimp sauce is complete! Enjoy it with a warm bowl of rice.
