Braised King Oyster Mushroom in Herbal Style
Herbal-Braised Mushroom Dish Using Santa-Rie King Oyster Mushrooms and Korean Herbal Tea
This is a special mushroom dish that captures the deep and rich flavor of Santa-Rie variety king oyster mushrooms, known for their meaty texture, combined with the profound essence of a Korean herbal tea (Ssanghwang-tang). The mushrooms alone deliver a satisfying chewiness and umami reminiscent of braised pork or five-spice pork, offering a unique ‘Jang-yuk’ (braised meat) experience. When wrapped in a tortilla with thinly sliced onions and crisp apples, and dipped in a special sauce, it creates an unexpectedly delightful harmony of flavors. Adding star anise to this recipe will transform it into a dish with the rich aroma of five-spice pork. This dish is an excellent choice for vegetarians craving braised pork or five-spice pork. Using a concentrated Ssanghwang-tang from a pharmacy will further enhance the deep, savory notes of the ‘Jang-yuk’. It’s perfect as an impressive dish for entertaining guests or as a flavorful side dish for rice.

Cooking Instructions
Step 1
Begin by meticulously preparing all the ingredients for the dish, including the Santa-Rie King Oyster Mushrooms, onion, apple, and tortillas.
Step 2
Gently rinse the prepared king oyster mushrooms under running water to remove any debris.
Step 3
To achieve a pleasant texture, tear the mushrooms into bite-sized pieces by hand rather than cutting them with a knife. This method creates a more natural and satisfying chew.
Step 4
Drain the torn mushrooms thoroughly in a colander. This step is crucial to prevent excess water from releasing during cooking, ensuring a richer flavor.
Step 5
Peel and thinly julienne half of the medium-sized onion.
Step 6
Soak the julienned onion in cold water for about 10 minutes to remove its sharp, pungent taste. After soaking, drain it completely. This process will enhance the natural sweetness of the onion.
Step 7
Core and thinly julienne half an apple. You can leave the skin on for added color and nutrients. The apple’s freshness will complement the dish’s overall flavor profile.
Step 8
In a heated pan, combine all the seasoning ingredients: Ssanghwang-tang, oyster sauce, soy sauce, brown sugar, minced garlic, and black pepper. Mix them well.
Step 9
Place the pan with the seasoning mixture over high heat and bring it to a boil.
Step 10
Once the seasoning mixture is boiling vigorously, add all the drained king oyster mushrooms to the pan.
Step 11
Reduce the heat to medium and simmer the mushrooms, allowing them to absorb the flavors of the sauce until the liquid has reduced to a glaze. Stir the mushrooms occasionally to ensure even cooking and coating.
Step 12
The braised mushroom dish is ready when the mushrooms have fully absorbed the sauce and are glazed, with very little liquid remaining. Finish by stirring in 1 tablespoon of sesame oil for a nutty aroma and rich finish.
Step 13
Prepare a dipping sauce to accompany the tortillas. Mix sriracha sauce and mayonnaise in a 1:1 ratio to create a creamy and spicy dip. Adjust the proportions to your preference.
Step 14
Cut the small tortillas into halves or quarters for easy handling. Arrange the finished braised mushrooms, julienned onion, julienned apple, and the prepared dipping sauce attractively on a serving plate.
Step 15
Place a generous portion of the braised mushrooms onto a tortilla piece. Top with the crisp julienned onion and sweet julienned apple.
Step 16
Fold the tortilla in half to securely enclose the filling. Dip generously into the sriracha mayonnaise sauce before taking a bite.
Step 17
Take a large, satisfying bite, and savor the delightful combination of the chewy braised mushrooms, fresh vegetables, and the spicy-sweet sauce. Enjoy your meal!
