  • Water (enough to cover the beans)

First, let’s prepare the kidney beans for delicious braising. Wash the beans thoroughly, then pour in plenty of water and soak them for 12 hours. Soaking them overnight will allow the beans to become plump and firm. Soaked beans will be much softer and have a better texture when cooked.

Place the soaked kidney beans (300g) in a pot. Add 2 pieces of dried kelp. The kelp adds a rich umami flavor when cooked with the beans. Pour in enough water to cover the beans, close the lid, and bring to a boil over high heat. Once the water is boiling vigorously, reduce the heat to medium-low and simmer for 15 minutes. Adjust the cooking time based on how tender you want the beans to be.

Taste a bean to check if it’s cooked to your liking. If the beans are tender, drain any excess water from the pot. (You can leave the kelp in or remove it; this is up to your preference.) Now, add 3 tablespoons of soy sauce and 1 tablespoon of ginger syrup. Begin to braise the beans over medium-low heat, allowing the sauce to penetrate and give the beans a lovely color.

It’s also delicious to braise the beans with the kelp still in the pot. The savory and flavorful kelp can be a delightful side dish on its own. Continue to stir occasionally as the beans simmer and glaze with the sauce. You don’t have to remove the kelp, so feel free to leave it in if you prefer.

When most of the liquid has evaporated and the beans look glossy, it’s time for the final touches. Add 1 tablespoon of oligosaccharide for sweetness and shine. Finally, drizzle in 1/3 tablespoon of perilla oil for a nutty aroma. You can substitute sesame oil for perilla oil if you prefer. Stir gently to combine all the flavors, and your delicious braised kidney beans are ready!
