This braised flatfish (gajami jorim) is a fantastic side dish perfect for any season, especially during the changing weather. Adding sweet onions creates a wonderful depth of flavor, complementing the mild, delicate taste of the flatfish. It’s a truly delicious combination that will have you coming back for more!
Main Ingredients- 2 Flatfish (Gajami), cleaned
- 1 medium Onion
- 1 stalk Green Onion (Scallion)
Seasoning Sauce- 3 Tbsp Soy Sauce
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Mirin (or cooking wine)
- 1 Tbsp Cheongju (or Soju)
- 1 Tbsp Fish Sauce (for broth)
- 1 Tbsp Ginger Juice (or minced ginger)
- 1 Tbsp Oligodang (or corn syrup)
- Pinch of Black Pepper
- 3 Tbsp Soy Sauce
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Mirin (or cooking wine)
- 1 Tbsp Cheongju (or Soju)
- 1 Tbsp Fish Sauce (for broth)
- 1 Tbsp Ginger Juice (or minced ginger)
- 1 Tbsp Oligodang (or corn syrup)
- Pinch of Black Pepper
Cooking Instructions
Step 1
Rinse the flatfish thoroughly under cold running water and pat it dry. Using a sharp knife, make 2-3 shallow slits diagonally across the fish. These slits help the seasoning penetrate better and ensure even cooking. Be careful not to cut too deep, as this can cause the delicate flesh to break apart during cooking.
Step 2
Slice the green onion diagonally into bite-sized pieces. Peel the onion and cut it into relatively thick slices (about 0.5 cm thick). Arrange the sliced onions evenly at the bottom of your braising pan or pot. This layer of onions will prevent the fish from sticking and will impart a natural sweetness to the sauce as it cooks.
Step 3
In a small bowl, combine all the seasoning sauce ingredients: 3 Tbsp soy sauce, 3 Tbsp gochugaru, 2 Tbsp mirin, 1 Tbsp cheongju (or soju), 1 Tbsp fish sauce, 1 Tbsp ginger juice, 1 Tbsp oligodang, and a pinch of black pepper. Whisk everything together until well combined.
Step 4
Carefully place the prepared flatfish on top of the onion layer in the pan. Pour the prepared seasoning sauce evenly over the fish. Add 1 cup (200ml) of water to the pan. Cover the pot with a lid and bring it to a boil over medium-high heat. Once boiling, reduce the heat to medium and simmer for about 5 minutes. After 5 minutes, remove the lid, lower the heat to low, and generously spoon the sauce over the fish repeatedly as it simmers. This basting action helps the fish absorb the flavors and keeps it moist.
Step 5
During the simmering process, if the sauce seems to be reducing too quickly or becomes too dry, add a tablespoon or two of water at a time to maintain a good consistency. Once the fish is cooked through and the sauce has thickened slightly and looks glossy, add the sliced green onions on top. Let it simmer for another 1-2 minutes, just until the green onions are slightly softened and fragrant. Then, turn off the heat. Your delicious braised flatfish is now ready!
