Introducing a super simple braised enoki mushroom side dish recipe that’s incredibly savory and satisfying! The chewy texture combined with the umami-rich sauce will have you finishing a bowl of rice in no time. This is a fantastic side dish you can enjoy any day, not just on special occasions.
Main Ingredients- 2 packs Enoki Mushrooms (approx. 200g)
Seasoning Ingredients- 1 Tbsp White Sugar (or granulated sugar)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2.5 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 1 Tbsp Chili Oil

Cooking Instructions
Step 1
First, rinse the enoki mushrooms clean. Trim off the root ends of the enoki mushrooms with a knife. This will help the mushrooms separate easily, making them convenient to cook.
Step 2
After trimming the roots, cut the enoki mushrooms into 2-3 larger sections. If you cut them too small, they might become mushy during cooking, so it’s best to cut them into moderate sizes.
Step 3
Gently press the cut enoki mushrooms with your hands to squeeze out excess water. Enoki mushrooms contain a lot of natural moisture, so this step will help the sauce absorb better and improve the texture.
Step 4
Now it’s time to make the delicious braising sauce. In a bowl, combine 1 Tbsp white sugar (or granulated sugar), 1 Tbsp gochugaru (Korean chili flakes), 2.5 Tbsp soy sauce, 1 Tbsp oyster sauce, and 1 Tbsp chili oil.

Using a spatula or spoon, stir the sauce ingredients well until they are evenly mixed and there are no lumps. Mixing thoroughly until the sugar is dissolved will create a more flavorful sauce.
Step 6
Place the cut enoki mushrooms in a preheated pan and stir-fry quickly over high heat. Stir-frying briefly over high heat helps to maintain the crisp texture of the mushrooms.

Once the enoki mushrooms are slightly cooked and begin to wilt, evenly drizzle the prepared sauce over them. It’s important to pour the sauce so it coats the mushrooms thoroughly.
Step 8
After adding the sauce, reduce the heat to medium-low. Continuously stir and cook the enoki mushrooms and sauce together for about 2-3 minutes, ensuring the sauce doesn’t stick to the pan. This will result in perfectly braised enoki mushrooms.
