Braising Sauce

  • 1/2 tsp vinegar (for boiling eggs)
  • 1 ladle soy sauce (approx. 1/2 cup)
  • 1 ladle water (approx. 1/2 cup)
  • 1/2 tsp sugar (adjust to taste)
  • A dash of sesame oil

Place the eggs in a pot with cold water and add about 1/2 teaspoon of vinegar. Adding vinegar helps the eggshells peel more easily and prevents the eggs from cracking while boiling. Boil over medium heat for about 10 minutes. Be aware that boiling for less than 10 minutes will result in soft-boiled eggs; ensure you boil for at least 10 minutes for hard-boiled eggs.

While the eggs are boiling, slice the king oyster mushroom into bite-sized pieces (about 1 cm thick). Thinly slice the garlic into slivers. Preparing the ingredients in advance will make the cooking process much smoother.

Once the eggs are boiled, immediately immerse them in cold water to cool them down. This will help the shells peel off more cleanly. Peeling the eggs while they are still slightly warm, before they cool completely, prevents them from breaking.

Add 1 ladle of water (approximately 1/2 cup) as well. A 1:1 ratio of soy sauce to water ensures a balanced, not-too-salty braising liquid.
