Braised Chicken with Kelp: A Delicious Blend of Textures
Make Delicious Braised Chicken with Rich Dietary Fiber from Kelp!
I love cooking with kelp! 🙂 This recipe was born from my desire to create a dish that my child would enjoy eating, and it’s been a huge hit ever since! ♥️
Main Ingredients
- 6 chicken drumsticks
- 1.5 onions, thinly sliced
- 15-20 sheets of dried kelp (lightly rinsed under running water)
Seasoning Ingredients
- 3 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 400ml water

Cooking Instructions
Step 1
First, spread the thinly sliced onions evenly across the bottom of the pot. The onions will help tenderize the chicken and kelp while also reducing any gamey odor.
Step 2
Next, arrange the prepared kelp and chicken drumsticks neatly on top of the onions. Then, carefully pour in 400ml of water. The liquid will simmer down, allowing the flavors to meld beautifully with the ingredients.
Step 3
Combine the soy sauce, sugar, and minced garlic to create the seasoning mixture, then pour it all into the pot. Bring it to a boil over high heat, allowing the seasonings to mix well.
Step 4
Once boiling over high heat, continue to cook for about 5-10 minutes, then reduce the heat to medium. Cover the pot and let it simmer gently for about 20-30 minutes, allowing the chicken to cook through and absorb the flavors. Basting occasionally with the sauce will enhance the taste.
Step 5
As time passes, you’ll notice the sauce thickening and a wonderful aroma filling the air. The sauce will coat the ingredients, giving them a beautiful sheen. Enjoy the process as the flavors concentrate.

The dish is ready when the kelp is tender yet chewy, and the chicken drumsticks are cooked through and easily pierced with a fork. If no pinkness is visible when poked, it’s perfectly cooked. Turn off the heat.
