A Hearty Braised Chicken and Vegetable Stew
This dish features tender chicken thighs braised with sweet cabbage and crisp radish, creating a comforting and flavorful stew. It’s a perfect side dish for any meal.
Main Ingredients- 1 piece of radish (approx. 1/4 of a medium radish)
- 2 large cabbage leaves (cut into large pieces)
- 1 section of green onion (sliced diagonally)
- 1 handful of chicken meat (cut into bite-sized pieces, thigh or breast recommended)
Seasoning- 2 Tbsp soy sauce
- 1 clove garlic (minced, or 1 whole clove, crushed)

Cooking Instructions
Step 1
First, cut the radish into approximately 1.5cm thick pieces, ensuring they are large enough for easy eating. Cutting them this way prevents them from becoming too mushy during the braising process, maintaining a pleasant texture.
Step 2
Place the cut radish in a pot and add enough water to cover it. Bring to a simmer over medium heat. Cook until the radish becomes translucent and slightly tender. This step helps to draw out the radish’s natural sweetness into the broth.

While the radish is cooking, cut the cabbage leaves into large pieces. Avoid cutting them too small, as they can become soft and lose their texture. Large pieces will ensure a satisfying bite.

Rinse the chicken meat thoroughly, trim any excess fat or sinew, and cut it into bite-sized pieces. Using chicken thighs will result in a more tender and moist stew.

Once the radish is almost cooked and the liquid has reduced slightly, add the large pieces of cabbage to the pot. Continue to simmer until the cabbage is tender but not overly soft.

Now it’s time to season. Add 2 tablespoons of soy sauce to the pot. The key here is to keep the seasoning simple to highlight the natural flavors of the ingredients.

Add 1 tablespoon of minced garlic (or the crushed whole clove) and the diagonally sliced green onion for aromatic depth. Garlic is essential for eliminating any gamey odors and enhancing the overall flavor.

Finally, add the prepared chicken meat to the pot. As the chicken cooks, the broth will become richer and more flavorful.
