- Black Pepper to taste (a pinch)

Cooking Instructions
Step 1
First, thoroughly thaw the frozen beltfish. Once thawed, rinse it under cold water and pat it dry. This step helps to remove any unpleasant odors and ensures a cleaner flavor.
Step 2
Arrange the thickly sliced radish at the bottom of the pot. The radish will soften as it cooks, absorbing the juices and sauce, which adds a wonderful depth of flavor to the beltfish stew.
Step 3
Finely chop the green chili peppers to add a fresh, spicy kick. You can remove the seeds if you prefer less heat. Adding red chili peppers along with the green ones is also a great option for color and flavor.
Step 4
In a small bowl, combine the soy sauce, oyster sauce, sugar, mirin, minced garlic, black pepper, perilla oil, and ginger preserve (or minced ginger). Mix well to create the seasoning sauce. Stir in the chopped green onions and green chili peppers. This combination creates a rich and flavorful sauce for the stew.
