Main Ingredients (Serves 3)

  • 300g fresh beef (such as chuck eye roll, suitable for stew or bulgogi)
  • 4 stalks bok choy
  • 1 handful green onions (scallions)
  • 2 cloves garlic

Seasoning and Other Ingredients

  • Salt, to taste (for marinating)
  • Pepper, to taste (for marinating)
  • 1 Tbsp oyster sauce
  • 2 Tbsp cornstarch (for coating beef and thickening)
  • 1 Tbsp sesame oil
  • Sesame seeds, for garnish

Cooking Instructions

Step 1

Start by preparing the bok choy. Separate the leaves and wash them thoroughly under cold running water to remove any dirt or grit. Gently shake off excess water. Set aside.

Step 1

Step 2

You can use any cut of beef you prefer. I used chuck eye roll for its tender texture, but sirloin or bulgogi-cut beef would also work well. Cut the beef into bite-sized pieces. In a bowl, season the beef with 1/2 Tbsp salt and a pinch of pepper. Then, add 2 Tbsp of cornstarch and mix well, ensuring each piece of beef is evenly coated. This step helps to tenderize the meat, allow it to absorb flavors better, and keeps it juicy during cooking.

Step 2

Step 3

To build a flavorful base, thinly slice the 2 cloves of garlic. Heat a pan over medium heat and add cooking oil. Add the sliced garlic and the green onions (cut into appropriate lengths). Sauté them gently until fragrant and lightly browned, releasing their aromatic oils. This creates a delicious garlic-and-green-onion infused oil.

Step 3

Step 4

Once the infused oil is fragrant, add the marinated beef to the pan. Increase the heat to medium-high and stir-fry the beef quickly, breaking up any clumps with chopsticks or a spatula, until it’s browned and cooked through. Ensure the beef is nicely seared for optimal flavor.

Step 4

Step 5

When the beef is mostly cooked, add the prepared bok choy to the pan. Pour in 1 Tbsp of oyster sauce. Stir-fry everything together quickly to combine the flavors. The oyster sauce will add a rich, savory depth that complements both the beef and the bok choy.

Step 5

Step 6

Stir-fry just until the bok choy leaves begin to wilt but still retain a slight crispness. Overcooking will make them mushy. Just before you’re done, drizzle in 1 Tbsp of sesame oil for an extra layer of aroma and give it a final toss to ensure everything is well mixed.

Step 6

Step 7

Transfer the finished bok choy and beef stir-fry to a serving plate. Sprinkle generously with sesame seeds for a final touch of flavor and visual appeal. This dish is a delightful meal on its own, a fantastic side dish, or even a delicious topping for steamed rice.
