I’ve made my absolute favorite gimbap! I love gimbap so much that just seeing it makes me crave it – it’s truly one of the only foods that calls to me. Haha! While I can be a bit picky with other dishes, gimbap is something I enjoy even with just pickled radish. Haha! Am I unusual for being so generous only with gimbap? Haha!
I usually keep gimbap ingredients stocked, but I tend to buy vegetables just before I plan to eat them. This time, I bought chives, but I was so busy I couldn’t make gimbap. My KakaoTalk friends probably know why I’ve been so busy by now. Haha!
However, the chives held up well for about a week. Thinking, ‘I’m going to have to throw these away soon!’, I decided to make gimbap yesterday. I was so happy! Haha! Such simple, small joys. Haha!
I packed the gimbap and took it to the place where I’m learning my hobby. My sisters and teachers there praised it profusely! They asked, ‘What’s your secret for the popping rice grains?’, and though I almost didn’t tell them, I ended up sharing it because they’re my teachers. Haha!

Gimbap Ingredients- Fluffy cooked black rice
- Gimbap seaweed sheets
- Seaweed flakes (optional)
- Eggs
- Ham
- Seasoned minced beef
- Fresh chives
- Imitation crab sticks (surimi)
- Fish cakes
- Julienned carrots
Cooking Instructions
Step 1
First, cook the rice until it’s fluffy. Black rice can absorb water slower than regular rice, so it’s important to use slightly less water or adjust the steaming time to achieve a slightly firm, ‘al dente’ texture. Let the cooked rice cool slightly.
Step 2
Prepare the filling ingredients, which are key to the gimbap’s flavor. Slice the ham and imitation crab sticks into bite-sized pieces and lightly sauté them. Similarly, slice and stir-fry the fish cakes with soy sauce and a touch of sugar for added umami. Finely julienne the carrots, stir-fry them in a lightly oiled pan with a pinch of salt. Wash the chives, drain them well, and season the minced beef with soy sauce, sugar, minced garlic, and pepper, then stir-fry until cooked. Beat the eggs, make thin omelets, and slice them into strips.
Step 3
Now it’s time to roll the delicious gimbap! Place a seaweed sheet on a bamboo rolling mat and spread the black rice thinly. Spreading the rice gently without clumping is the secret to the popping texture of the grains. Arrange the prepared filling ingredients attractively on top of the rice. Using the mat, roll the gimbap tightly. Lightly moisten the edge of the seaweed with water to help it seal securely. Slice the finished gimbap into bite-sized pieces and enjoy!
