Pizza Dough

  • 500g boiled potatoes, mashed
  • 6 Tbsp potato starch
  • 3 pinches of salt
  • 4 Tbsp sugar
  • 2 Tbsp mayonnaise
  • 2 Tbsp melted butter
  • 3 twists of black pepper
  • Cooking oil, as needed

Toppings – As Desired

  • Pizza sauce
  • Sweet corn (drained)
  • Onion (chopped or thinly sliced)
  • Sausage (sliced)
  • Mozzarella cheese

Cooking Instructions

Step 1

Mash 500g of boiled potatoes thoroughly. It’s best to mash them while they are still warm for a smoother texture.

In a bowl, combine the mashed potatoes with 6 Tbsp of potato starch, 3 pinches of salt, 4 Tbsp of sugar, 2 Tbsp of mayonnaise, 2 Tbsp of melted butter, and 3 twists of black pepper. Mix everything well until it forms a cohesive dough.

Once everything is combined, knead the dough with your hands for about 3-5 minutes. This helps develop a slightly chewy texture. Continue kneading until the dough becomes smooth and elastic.

Divide the dough into smaller portions. Flatten each portion into a disc shape using your hands. Place a generous amount of mozzarella cheese in the center of each disc to create the filling.

Carefully pinch the edges of the dough together to enclose the cheese completely, ensuring no cheese leaks out. Shape them into small, flat patties, similar to making ‘hotteok’ (Korean sweet pancakes).

Prepare your toppings: slice the sausage and chop or thinly slice the onion. Heat a little oil in a pan over medium heat and sauté the onions and sausage until the onions are translucent and the sausage is lightly browned. Stir occasionally to prevent burning.

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Carefully place the shaped potato pizza patties into the pan. Cook them slowly, ensuring they don’t burn and cook through.

Once the bottom side of the patties is golden brown, carefully flip them over. Cook for another 1-2 minutes, then flip them back one more time and cook for another 1-2 minutes. This ensures they are evenly golden and cooked.

After cooking both sides of the potato bases, flip them one last time so the cooked side is up. Spread a layer of pizza sauce evenly over the top of each potato base.

Now, layer your toppings. Sprinkle generously with mozzarella cheese, then add the drained sweet corn, sautéed sausage, and onions. Arrange them attractively over the pizza sauce.
