Start by preparing your cherry tomatoes. Wash them thoroughly under cold running water. Carefully slice off the top portion of each tomato. Then, using a small spoon or the tip of a paring knife, gently scoop out the seeds and some of the pulp to create a small cavity. This will make it easy to fill the tomatoes.

Now, for the first style: take a fresh basil leaf and tuck it inside the cavity of the hollowed-out cherry tomato. Follow with a small piece of fresh mozzarella cheese. This is the base for our first mini Caprese.

For the second style, dice the fresh mozzarella cheese into small cubes, about 1 cm in size. Then, carefully fill the hollowed-out cherry tomatoes with these cheese cubes, a basil leaf, and perhaps a tiny piece of tomato pulp. Gently press the top of the tomato back on to hold everything together.
