Cooking Instructions
Step 1
Hello everyone! Today, I’m excited to share a recipe for bellflower (doraji) namul stir-fry that’s tender and delicious, with all the characteristic bitterness expertly removed. This method is perfect for a simple side dish or as a flavorful addition to bibimbap. Shall we get started?
Step 2
First, make sure you have your pre-prepared bellflower (doraji) that has undergone its initial bitterness removal. Now, for the second stage of removing bitterness: Place the doraji in a bowl and add 1/2 teaspoon of sugar and 1/2 teaspoon of salt. Gently massage the doraji with your hands, like you’re kneading dough, until some milky liquid starts to appear.
Step 3
See? After massaging it like this, most of the bitterness is gone! Simple, isn’t it? This step is key to ensuring a pleasant taste, making the doraji enjoyable for everyone, even those who might be sensitive to its natural bitterness.
Step 4
Now, it’s time to stir-fry the doraji. Heat a non-stick frying pan over medium-high heat and add 2 teaspoons of perilla oil (deulgireum). Once the oil is shimmering, add the prepared doraji. Stir-fry gently for a minute or two, being careful not to burn it, just to soften its texture slightly.
Step 5
After the doraji has been lightly stir-fried, add the thinly julienned red bell pepper and a handful of chopped scallions. These additions bring beautiful color and a nice texture to the dish. If you like, you can also add some minced garlic at this stage for an extra aromatic kick.
Step 6
Finally, sprinkle in 1 teaspoon of toasted sesame seeds for a nutty aroma. Season with 1/2 teaspoon of salt and 1/2 teaspoon of sugar to balance the flavors. To recap, we’ve used: 2 tsp perilla oil, 1 handful scallions, 1 handful red bell pepper, 1 tsp toasted sesame seeds, 1/2 tsp salt, and 1/2 tsp sugar.
Step 7
And there you have it! A wonderfully tender and savory bellflower (doraji) namul stir-fry, made completely bitter-free. This recipe, with its special method for removing bitterness, is a true gem for your table. Enjoy this delicious and healthy side dish!
