Ingredients- Beef (short rib meat recommended) 600g
- Dried shiitake mushrooms 3 pieces (pre-soaked in warm water)
- Onion 1/8 (finely minced)
- Glutinous rice flour 3 Tbsp (for a chewy texture)
- Honey 3 Tbsp (for subtle sweetness and shine)
- Soy sauce 2 Tbsp (for deep umami)
- Minced garlic 1 Tbsp
- Sesame oil 1/2 Tbsp
- Black pepper 1/4 tsp
- Ground pine nuts 1/2 Tbsp (for garnish)
Cooking Instructions
Step 1
First, prepare the star ingredient: the beef short rib meat. Gently pound the meat with the back of a knife or the side of the blade. This technique helps to tenderize the meat and allows the seasonings to penetrate better. Continue to mince the beef as finely as possible for the best texture.
Step 2
Finely mince the onion, squeezing out any excess moisture. Drain the soaked dried shiitake mushrooms and chop them finely. The chewy texture of the mushrooms will further enhance the deliciousness of the galbi-jjim.
Step 3
In a large bowl, combine the minced beef, minced onion, and chopped shiitake mushrooms. Add the glutinous rice flour, honey, soy sauce, minced garlic, sesame oil, and black pepper. Mix all ingredients except the ground pine nuts thoroughly. It’s crucial to knead the mixture with your hands for at least 10 minutes until it becomes elastic and well-combined. This step ensures the patties hold their shape and achieve a pleasant chewy texture.
Step 4
Shape the meat mixture into bite-sized, round patties. For an even better result, gently press the center of each patty to create a slight indentation. This helps the patties cook evenly all the way through, ensuring they remain moist and perfectly cooked.

Heat a lightly oiled frying pan over medium-low heat. Place the shaped patties in the pan and cover with a lid. Cook for approximately 7-8 minutes per side, flipping carefully to ensure both sides are golden brown and cooked through.
