Today, I’m sharing a light yet satisfying recipe for ‘Beef Flank Steak Bibim Makguksu’ (spicy cold buckwheat noodles). This dish features a refreshing, sweet, and spicy sauce, paired with crisp fresh vegetables and tender beef flank steak, offering both deliciousness and health benefits. Ingredients

  • 100g beef flank steak
  • 50g buckwheat noodles (makguksu)
  • 100g cabbage
  • 30g perilla leaves
  • 50g cucumber
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

Prepare your chosen vegetables by julienning them thinly. I used pre-shredded coleslaw mix for the cabbage, and thinly sliced the perilla leaves and cucumber after washing them thoroughly. Feel free to use any leftover vegetables you have in your refrigerator.

Bring a pot of water to a rolling boil. Add the buckwheat noodles and, once they float to the surface, add one cup of cold water to bring it back to a boil. Repeating this step about twice will result in chewier noodles. Cook for approximately 8 minutes total. After cooking, rinse the noodles under cold running water, gently rubbing them to remove excess starch. Press them lightly with your hands to squeeze out water, then place them in a colander to drain completely.

Let’s make the delicious spicy and sweet sauce! In a bowl, combine 1 Tbsp gochujang, 1 Tbsp plum extract, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Even with these simple ingredients, you’ll achieve a truly amazing sauce! (This recipe is for one serving; the sauce in the photo was made in a larger batch for 4 people, using the same ratio.)

Pat the beef flank steak dry with paper towels. Heat a pan over medium-high heat and sear the steak on both sides until nicely browned and cooked to your liking. Be careful not to overcook it, as it can become tough.

Place the drained buckwheat noodles onto a serving plate. Artfully arrange the prepared vegetables and the cooked beef flank steak on top. Using a round plate will make for a more visually appealing presentation.
