  • 1 cup (200ml) anchovy-kelp broth
  • 1/2 medium onion
  • 1 large green onion

Seasoning

  • 2 Tbsp oyster sauce
  • 2 Tbsp cooking wine (like mirin)
  • 5 Tbsp pear juice
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup or oligosaccharide
  • Pinch of black pepper
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, soak the dried glass noodles (100g) in cold water for at least 30 minutes until fully rehydrated. This ensures they cook evenly and become pleasantly chewy without clumping.

Step 2

Pat the thinly sliced beef (500g) thoroughly with paper towels to remove excess blood. Removing the blood is crucial for a clean, savory flavor without any gamey notes.

Step 3

In a bowl, combine all seasoning ingredients except for sesame oil and sesame seeds: minced garlic, soy sauce, oyster sauce, cooking wine, pear juice, sugar, corn syrup, and black pepper. Whisk well to create a delicious marinade. The pear juice helps tenderize the meat and adds a natural sweetness.

Slice the onion (1/2 medium) into thin strips. Separate the white and green parts of the green onion (1 large). Slice the green parts into bite-sized pieces, and finely mince the white parts to add to the marinade.

Prepare 1 cup of anchovy-kelp broth. Using broth instead of plain water will significantly deepen and enrich the flavor of your Bulgogi Hot Pot.
