- King oyster mushrooms – 1 bundle

- Bean sprouts – 300g (about 1/3 bundle)

Cooking Instructions
Step 1
First, prepare the main ingredients for your beef brisket rolls. This is a fantastic way to use up various vegetables you have in your refrigerator! Gather vegetables like bean sprouts, chives (or green onions), king oyster mushrooms, bell peppers, and carrots. If you don’t have beef brisket, thinly sliced pork belly (samgyeopsal) can be a good substitute. Wash all the prepared vegetables thoroughly. Then, julienne them into strips that are easy to roll with the beef brisket, and cut them into bite-sized pieces. For the king oyster mushrooms, trim off the tough ends and separate them into strands.
Step 2
Now it’s time to roll the beef brisket with the vegetables. Lay one slice of beef brisket flat. Place a moderate amount of your prepared vegetables onto the brisket. Be mindful not to overfill, as it can make rolling difficult. Gently roll the brisket around the vegetables, ensuring it’s snug. Your beautifully rolled beef brisket bundles are now ready!
Step 3
Next, steam the prepared beef brisket rolls. Fill a steamer pot with water and bring it to a boil. Once steaming, spread the cleaned bean sprouts evenly on the bottom of the steamer basket. This prevents the rolls from sticking and helps them steam evenly. Arrange the rolled beef brisket bundles on top of the bean sprouts, ensuring they are not overlapping. Steam for approximately 10 minutes, or until the vegetables are tender-crisp. You want them to retain a pleasant crunch, so avoid overcooking.
Step 4
Once steaming is complete, carefully remove the steamer basket. First, arrange the steamed bean sprouts from the bottom of the steamer onto a serving plate. Then, artfully place the tender beef brisket rolls on top of the bed of bean sprouts. The colorful vegetables and the glistening brisket create an appealing presentation.
Step 5
Finally, serve with your favorite dipping sauces. You can use store-bought sweet chili sauce or peanut sauce as is, or whip up your own! These sauces pair wonderfully with the savory brisket and fresh vegetables. A simple soy-vinegar dipping sauce also works beautifully. (For a simple soy-vinegar sauce: mix 1 tbsp soy sauce, 1 tbsp water, 0.5 tbsp honey or sugar, 0.5 tbsp minced garlic, and 0.5 tbsp vinegar or lemon juice.)
