No More Tedious Red Bean Boiling! Simple Five-Grain Rice & Beef Brisket Soft Tofu Doenjang Jjigae
I’ve made a simple five-grain rice! When making five-grain rice, the biggest worry is often whether the red beans will cook properly. But I found a simple method where I don’t need to boil the red beans separately, and I cooked them with other grains. They turned out perfectly cooked and delicious! After making this five-grain rice, and since I had some pre-made side dishes (namul), I just quickly simmered a doenjang jjigae. This doenjang jjigae, made with beef brisket broth and soft tofu, is ready in just 5 minutes from when the water boils to completion. Despite being quick, the broth isn’t weak; it’s rich and savory. A hearty Korean meal with five-grain rice, seasoned vegetables, and this savory beef brisket and soft tofu doenjang jjigae – you won’t envy anyone’s full table! Serve a satisfying meal. Five-Grain Rice Ingredients- 1 cup rice
- 1/2 cup red beans
- 1/2 cup black rice
- 1/2 cup black barley
- 1/2 cup proso millet
- 1/2 cup black soybeans
- Water (for cooking rice)
Beef Brisket Soft Tofu Doenjang Jjigae Ingredients- 1/2 zucchini (sliced into bite-sized pieces)
- 1 pack soft tofu (cut into bite-sized pieces)
- 1/2 cup beef brisket slices
- 1 mushroom (e.g., king oyster, sliced into bite-sized pieces)
- 1/2 zucchini (sliced into bite-sized pieces)
- 1 pack soft tofu (cut into bite-sized pieces)

Cooking Instructions
Step 1
First, rinse the grains for the five-grain rice (rice, red beans, black rice, black barley, millet, black soybeans) thoroughly. You don’t need to pre-soak the red beans; we’ll cook them directly in the rice. Drain the rinsed grains in a colander.
Step 2
Place the drained grains into your rice cooker. Add water as you normally would for cooking rice. Press the cook button to make delicious multi-grain rice. Don’t worry about the red beans not being pre-soaked; they will cook perfectly fine in the rice cooker.
Step 3
Prepare the vegetables for the doenjang jjigae. Slice the zucchini into half-moons or bite-sized pieces. Slice the mushroom similarly. Cut the soft tofu from its packaging into large chunks. Prepare the beef brisket slices into manageable pieces.
Step 4
Pour water into a ttukbaegi (earthenware pot) or a regular pot and bring it to a boil. Once boiling, dissolve 2 tablespoons of doenjang into the water. Add 1/2 teaspoon of beef bouillon powder and minced garlic. Then, add the sliced zucchini, mushrooms, and beef brisket slices in that order.
Step 5
Once the ingredients are partially cooked, carefully add the large chunks of soft tofu. Finally, generously sprinkle chopped green onions on top. Cover the ttukbaegi or let it simmer for another moment until the savory and delicious beef brisket and soft tofu doenjang jjigae is ready. (Approx. 2-3 minutes)
Step 6
Serve the perfectly cooked five-grain rice and the hot, freshly made beef brisket and soft tofu doenjang jjigae. Enjoy a hearty and satisfying Korean meal with your pre-made side dishes. Eat well and stay healthy today!
