Main Ingredients- 350g beef brisket slices
- 300g bean sprouts
- 1/2 onion
- 2 Korean chili peppers (cheongyang)
- 1 red chili pepper
- 3 stalks scallions
- 1 Tbsp minced garlic
- 0.3 Tbsp salt (for blanching bean sprouts)
Special Peanut Sauce- 2 Tbsp peanut butter
- 1.5 Tbsp soy sauce
- 2 Tbsp oligodang (corn syrup)
- 3 Tbsp water
- 1 Tbsp mustard paste (yeongeoja)
- 2 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds
- A pinch of black pepper (for cooking brisket)
- 2 Tbsp peanut butter
- 1.5 Tbsp soy sauce
- 2 Tbsp oligodang (corn syrup)
- 3 Tbsp water
- 1 Tbsp mustard paste (yeongeoja)
- 2 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp sesame seeds
- A pinch of black pepper (for cooking brisket)
Cooking Instructions
Step 1
First, gently press the beef brisket slices with paper towels to absorb any excess blood. This step helps to remove any gaminess and ensures a cleaner flavor.
Step 2
Blanch the bean sprouts in boiling water with 0.3 Tbsp of salt. Cook them just until they turn slightly translucent – about 1-2 minutes. Overcooking will make them soggy, so be mindful of the time. Immediately rinse the blanched sprouts in cold water to stop the cooking process, then drain them thoroughly and set aside.
Step 3
Thinly slice the red chili pepper, Korean chili peppers, and onion into fine strips. Chop the scallions. In a bowl, combine the cooled, blanched bean sprouts with the sliced vegetables, chili peppers, and minced garlic.
Step 4
Add 1 Tbsp of sesame oil to the ingredients in the bowl and gently toss to mix. This seasoned bean sprout salad is delicious on its own! The key to this recipe is serving the sprouts fresh and un-stirred, rather than stir-fried.
Step 5
Since beef brisket is quite fatty, you don’t need to add any oil to the pan. Simply place the brisket slices in a preheated pan and cook until nicely browned. Sprinkle a pinch of black pepper over the brisket as it cooks to enhance its aroma.
Step 6
Arrange the seasoned bean sprout mixture attractively on a serving plate. Once the beef brisket is cooked, carefully layer it over the bean sprouts.
Step 7
Garnish the dish by artfully placing a few of the reserved sliced vegetables and chili peppers on top of the cooked beef brisket.
Step 8
Now, let’s prepare the special peanut sauce that makes this dish truly unique! In a separate bowl, combine 2 Tbsp peanut butter, 1.5 Tbsp soy sauce, 2 Tbsp oligodang, 3 Tbsp water, 1 Tbsp mustard paste, 2 Tbsp vinegar, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Whisk everything together until well combined. For a smoother sauce, you can use an immersion blender to ensure the peanut butter is fully incorporated.
Step 9
Serve the completed Beef Brisket and Bean Sprout Stir-fry with this irresistible peanut sauce on the side.
Step 10
Drizzle some of the peanut sauce over the beef brisket and bean sprouts, and serve the remaining sauce in a small dipping bowl. This allows everyone to enjoy the rich, nutty flavor exactly to their liking.
Step 11
This Beef Brisket and Bean Sprout Stir-fry, elevated by the special peanut sauce, is a truly impressive dish perfect for entertaining guests! If you love beef brisket, this simple yet elegant recipe is sure to be a hit. Enjoy creating this delightful culinary experience!
