Enjoy a bowl of Beef and Radish Soup, a delightful combination of nutritious beef and refreshing radish, creating a clear and invigorating broth that’s simply exquisite. It’s the perfect companion to a bowl of rice.
Main Ingredients- 400g fresh beef (brisket or soup cut)
- 1/4 portion of crisp radish (approx. 300g)
- 1/2 block of soft tofu
- 1/2 cup chopped green onions
- 1 Tbsp minced garlic
- 3 Tbsp fish sauce for umami
Cooking Instructions
Step 1
First, cut the fresh Korean beef brisket into bite-sized pieces. Heat 1-2 tablespoons of perilla oil in a pot over medium-high heat and add the beef to stir-fry.
Step 2
Continue to stir-fry the beef until the pink color disappears and it turns a uniformly appetizing brown. This stir-frying process enhances the beef’s flavor.
Step 3
Once the beef has turned a nice brown color, add the daikon radish, cut into large pieces, and stir-fry together for about 1-2 minutes. This step allows the radish to absorb some of the oil and beef drippings.
Step 4
Lightly stir to coat the radish with the oil and beef drippings. (This step is optional, but stir-frying deepens the flavor.)
Step 5
Pour in plenty of water (about 1.5L to 2L) to add a refreshing quality to the stir-fried beef and radish. Bring it to a rolling boil over high heat.
Step 6
Once the soup boils, reduce the heat to medium-low, cover, and simmer for about 10-15 minutes. Brisket becomes more tender and the broth richer the longer it’s simmered. Cook until the radish turns translucent and soft.
Step 7
When the broth has sufficiently infused and the radish is cooked, add the tofu, cut into cubes. Be careful not to overcook the tofu as it might break apart; add it in the final stages.
Step 8
Season the soup with fish sauce for umami. You can also use salted shrimp or soy sauce for soup, but fish sauce adds a delightful depth. Add 3 tablespoons of fish sauce, mix well, and check for seasoning. Add more if needed.
Step 9
Finally, generously add the chopped green onions. The fresh aroma of the green onions will infuse into the soup.
Step 10
Lastly, add 1 tablespoon of minced garlic and bring to a brief boil. The pungent aroma of garlic will spread through the soup, creating a richer taste. Once it boils for a moment, turn off the heat and serve hot.
