Cooking Instructions

Step 1

Gently pat the beef dry with paper towels to remove excess moisture. In a bowl, combine the beef with 1 Tbsp of vegetable oil and a pinch of black pepper, mixing well to marinate. Heat a non-stick pan over medium heat. Add the marinated beef without any oil and stir-fry for about 1 minute. Once the beef is no longer pink on the outside, immediately transfer it to a separate plate. Be careful not to overcook, as this can make the beef tough.

Finely chop the Korean red chili peppers. Remove the seeds from the green and red bell peppers, then slice them into strips about 0.4cm thick. Slice the onion to a similar thickness as the bell peppers. Cut the leek into three sections, then slice each section into 4cm lengths. Trim the tough stems from the shiitake mushrooms and slice them thinly, about 0.2cm thick. Cut the chives into 5cm lengths. If you prefer a milder flavor, you can omit the Korean red chili peppers. Rinse the bamboo shoot strips under running water 3-4 times until clean, then squeeze out any excess water.

Heat the pan over medium heat and add 30ml of chili oil. Add the sliced leeks, shiitake mushrooms, and the drained bamboo shoot strips. Stir-fry for about 1 minute until fragrant, infusing the oil with their flavors.

Add the sliced green and red bell peppers and onions to the pan. Stir-fry over high heat for about 2 minutes to keep them crisp and vibrant. Add the chopped Korean red chili peppers at this stage as well.

Add the stir-fried beef and chopped chives back into the pan. Pour in the prepared Gochu Japchae sauce (if you have a separate sauce recipe, add it here). Stir everything together evenly and continue to cook for another minute, allowing the sauce to coat all the ingredients.

Finally, drizzle the remaining 10ml of chili oil around the edges of the pan. Quickly mix everything together to add a final gloss and boost the flavor. Turn off the heat immediately after mixing.
