Ingredients- 1 serving pasta (approx. 80-100g)
- 100g fresh bean sprouts
- 4 cloves garlic
- 3 dried red chili peppers (peperoncino)
- 2 stalks scallions (green onions)
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp unsalted butter
- Pinch of salt
- Pinch of black pepper
- Olive oil, as needed
- Parmesan cheese, for garnish (optional)
Cooking Instructions
Step 1
Begin by preparing your aromatics. Finely chop the scallions. Mince the garlic cloves or give them a coarse chop to release more flavor.

Bring a large pot of water to a rolling boil. Add a generous pinch of salt (about 1 tablespoon per liter of water). Add the pasta and cook according to package directions, aiming for al dente – about 7-8 minutes. It’s best to slightly undercook it as it will finish cooking in the pan.

While the pasta cooks, heat a generous amount of olive oil in a skillet over medium-low heat. Add the minced garlic and sauté gently, taking care not to burn it. You want to infuse the oil with a fragrant garlic aroma.

Once the garlic is fragrant, add the dried red chili peppers (you can break them in half for more heat) and the fresh bean sprouts to the skillet. Sauté for about 1-2 minutes, just until the bean sprouts begin to wilt slightly. You want to maintain their crisp texture.

Add the cooked pasta directly to the skillet with the bean sprouts. Pour in about 1/2 cup of the reserved pasta water, the soy sauce, and the sugar. Increase the heat to medium-high and toss everything together vigorously to coat the pasta and allow the sauce to emulsify.
