  • 2 slices of cheese (cheddar or mozzarella, your choice)
  • 2 homemade sausages (can be substituted with regular ham)
  • 2 medium potatoes (approx. 300g)
  • 2 fresh eggs
  • A pinch of cooking salt (about 1/2 tsp)

First, peel the potatoes and cut them into thin strips, about 2-3mm thick. If they are too thick, they will take longer to cook. Cut the homemade sausages into strips similar in thickness to the potatoes. (You can also cut the sausages into smaller pieces if you prefer.)

Place the julienned potatoes in cold water for about 5 minutes to remove excess starch. This helps prevent the potato strips from sticking together and makes for a cleaner pancake. Squeeze out excess water, place the potatoes in a bowl, add a pinch of salt, and gently mix them. Ensure the seasoning is evenly distributed.

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Add all the seasoned potato strips and spread them out evenly.
