Super Easy Beef Janchi Guksu (Serves 2)- Noodles for 2 servings
- 1/2 cup beef (thinly sliced, like for bulgogi)
- 2 Tbsp perilla oil (deulgireum)
- 1/4 zucchini
- 1/4 carrot
- 1/4 onion
- A small piece of radish (thinly sliced)
- 1 Tbsp minced garlic
- 2 Tbsp anchovy sauce (myeolchi aekjeot)
- 10 cups water (2 liters)
Flavorful Seasoning Sauce- 3 Tbsp soy sauce
- 1/2 green onion (chopped)
- 1 chili pepper (chopped)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp minced garlic
- Sesame seeds (a pinch)
- Sesame oil (a drizzle)
- 3 Tbsp soy sauce

Cooking Instructions
Step 1
First, prepare the vegetables for the broth. Thinly slice the zucchini, onion, and carrot. Also, thinly slice the radish. Slicing them this way will make the broth cleaner and refreshingly flavorful.
Step 2
Next, prepare the ingredients for the seasoning sauce. Finely chop the green onion and chili pepper. Mince the garlic as well. This way, the sauce will be ready quickly.
Step 3
Now, let’s start stir-frying the beef. Heat 2 tablespoons of perilla oil in a pot. Add the prepared beef and stir-fry it first until it’s nicely browned and fragrant. Stir-frying the beef releases its savory oils and deepens the broth’s flavor.
Step 4
Once the beef is about halfway cooked, add the sliced radish and stir-fry it for a moment. After the radish starts to look slightly translucent, pour in the 10 cups of water and cover the pot to boil. The radish will release its refreshing taste, making the broth even more delicious.
Step 5
When the broth comes to a rolling boil, add all the sliced zucchini, onion, carrot, and 1 Tbsp of minced garlic. The vegetables will cook and add sweetness and depth to the broth.
Step 6
While the broth is boiling, prepare to cook the noodles. In a large pot of boiling water, add the noodles. To prevent them from sticking together, add a little cold water periodically while they cook. (This technique is called ‘kkamjjak mul’ or ‘surprise water.’)
Step 7
When the noodles are almost done, gently pour in the beaten egg in a circular motion using a ladle. The egg will cook and add a lovely texture and richness to the soup. Finally, season the broth with 2 Tbsp of anchovy sauce. Taste and add salt if needed to reach your desired flavor.
Step 8
Finally, let’s make the seasoning sauce. In a bowl, combine 3 Tbsp soy sauce, chopped green onion, minced chili pepper, 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, sesame seeds, and sesame oil. Mix well. Serving this sauce over the noodles will provide a spicy and incredibly savory Janchi Guksu experience.
