Spicy & Sweet Dakgalbi Sauce

  • 1/3 cup soy sauce (approx. 80ml)
  • 1/3 cup mirin (or cooking wine) (approx. 80ml)
  • 1/3 cup gochujang (Korean chili paste) (approx. 80g)
  • 1/3 cup fine gochugaru (Korean chili flakes) (approx. 30g)
  • 1/3 cup sugar (approx. 60g)
  • 1/3 cup minced garlic (approx. 50g)
  • 1 tsp minced ginger (approx. 5g)
  • A pinch of black pepper
  • 1 Tbsp sesame oil (approx. 15ml)

Cooking Instructions

The key to delicious dakgalbi is the sauce! First, cut about 500g of chicken thigh or boneless chicken into bite-sized pieces (about 3-4cm). In a mixing bowl, combine the chicken with all the sauce ingredients: soy sauce, mirin, gochujang, gochugaru, sugar, minced garlic, minced ginger, and black pepper. Gently mix everything together with your hands until the chicken is evenly coated. Let it marinate for at least 10 minutes for a deeper flavor.

While the chicken is marinating, prepare the vegetables. Slice 1 onion thickly. Chop 1/4 head of cabbage into large pieces. Cut 4 stalks of green onion into 5cm lengths diagonally. Peel and cut 1/2 sweet potato (or potato) into pieces about the thickness of your pinky finger. Adding sweet potatoes or potatoes will make the dakgalbi even more delicious with their sweetness.

Add all the prepared vegetables to the marinated chicken and mix well again. Heat a pan over medium-high heat and add the mixture. Stir-fry for about 5 minutes, then reduce the heat to medium. Once the vegetables start releasing moisture, stir and flip continuously to prevent sticking and ensure even cooking. You can test if the sweet potatoes or potatoes are cooked by poking them with a chopstick.
