Broth Ingredients- 10 cups water
- 1 handful dried anchovies (for broth)
- 1 sheet dried kelp (10x10cm)
- 1 piece radish (approx. 50g)
- 1 whole green onion root
Cooking Instructions
Step 1
First, pour 10 cups of water into a deep pot. Add the dried anchovies, kelp, radish, and green onion root to create a rich, deep broth. Removing the anchovies’ guts can make the broth taste cleaner.
Step 2
Adding half an onion can also enhance the broth’s flavor. Once boiling, simmer on high heat for about 10 minutes, then remove the kelp after 5 minutes to avoid a bitter taste.
Step 3
While the broth is simmering, prepare the 2 eggs. First, separate the yolks and whites. Then, thinly pan-fry each into an omelet and let them cool. Separating them makes for a more visually appealing garnish.
Step 4
Roll up the cooled egg omelets like a sushi roll and slice them thinly. This will make your garnishes look much more appetizing.
Step 5
Thinly julienne half an onion. Be careful not to cut them too thick, as they might take too long to cook.

Julienne half a zucchini into similar thickness. Zucchini can become mushy if overcooked, so it’s best to sauté it lightly or add it to the broth for a short time.

Once the noodles are cooked to your liking, rinse them thoroughly under cold running water to remove excess starch. This step is crucial to prevent the noodles from becoming soggy and to ensure a chewy texture.
