Main Ingredients

  • 2 packs of instant ramen (for 2 servings)
  • 2 handfuls of soybean sprouts (for topping)
  • 2 Korean green chili peppers (Cheongyang peppers)
  • 1 onion

Cooking Instructions

Step 1

First, thinly slice the onion for the topping and finely mince the green chili peppers after removing the seeds. If you want to reduce the onion’s pungency, you can soak it in cold water for a while before using.

Step 2

Now, let’s make the special broth, which is the key to chilled ramen. Chef Baek Jong-won’s recipe uses a seasoned soy sauce, but if you don’t have it, you can substitute with commercial tsuyu or regular soy sauce you have at home. Measure 1 cup of water, 2 tablespoons of soy sauce, 2 tablespoons of sugar, and 2 tablespoons of vinegar into a bowl. Mix well until the sugar dissolves.

Step 2

Step 3

Add the ramen seasoning packet (both powder and dried vegetable flakes) to the mixed broth and stir until there are no lumps. This completes the flavorful Baek Jong-won style chilled ramen broth.

Step 3

Step 4

Fill a wide pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add the 2 packs of ramen and the dried vegetable flakes. Cook for about 1 minute less than the time indicated on the package. It’s important not to overcook the noodles so they don’t get mushy.

Step 4

Step 5

When the ramen is almost cooked, add the prepared soybean sprouts and sliced onion. Cook for another 30 seconds to 1 minute. Avoid cooking the soybean sprouts for too long, as they will become soft; maintaining their crispness is key.

Step 5

Step 6

While the noodles and vegetables are cooking, prepare a bowl of ice-cold water. You’ll use this to rinse the noodles after draining the hot cooking water.

Step 6

Step 7

Drain the cooked ramen and vegetables, then rinse them under cold running water 2-3 times to remove the heat. Afterward, place the noodles in the prepared ice-cold water to chill them thoroughly. This step makes the noodles firmer and enhances their refreshing taste.

Step 7

Step 8

Now, all preparations are complete. It’s time to plate the delicious-looking chilled ramen.

Step 8

Step 9

Arrange the chilled noodles attractively in a ramen bowl or a deep dish. Place the cooked vegetables (soybean sprouts and onion) on top of the noodles, and garnish with the minced green chili peppers for a touch of spiciness.

Step 9

Step 10

Pour the prepared special broth over the noodles, and finally, add plenty of ice cubes. Your delicious Baek Jong-won style chilled ramen, with both great taste and appearance, is now ready! Enjoy!
