Ingredients- 3 slices Pork Neck (approx. 300g)
- 2 handfuls Cheongyang Peppers (approx. 150g)
- 10 whole Garlic cloves
- A little Green Onion (approx. 1/4 stalk)
- A pinch of Black Pepper
Seasoning- 3 Tbsp Soy Sauce
- 1 Tbsp Mirin (or Cooking Wine)
- 1 Tbsp Sugar
- 1 Tbsp Oligodang (Corn Syrup)
- 1 Tbsp Minced Garlic
- Sesame Seeds (for garnish)
- 3 Tbsp Soy Sauce
- 1 Tbsp Mirin (or Cooking Wine)
- 1 Tbsp Sugar
- 1 Tbsp Oligodang (Corn Syrup)
- 1 Tbsp Minced Garlic
- Sesame Seeds (for garnish)
Cooking Instructions
Step 1
Wash the Cheongyang peppers thoroughly under running water. Trim off the stems and cut them into bite-sized pieces, about 4-5cm long. If the peppers are very large, you can cut them in half lengthwise.
Step 2
Peel the whole garlic cloves and slice them in half horizontally for a flatter surface. While pre-peeled garlic is convenient, using whole garlic sliced this way adds a pleasing texture. Chop the green onion into small pieces to add a fresh aroma.
Step 3
In a small bowl, combine 3 tablespoons of soy sauce and 1 tablespoon of mirin. Whisk them together to create your seasoning sauce. Having it ready makes the stir-frying process much smoother.
Step 4
Place the pork neck slices into a heated pan. Sprinkle a pinch of black pepper over the pork to help eliminate any unwanted odors.
Step 5
Stir-fry the pork slices until they are nicely browned and cooked through on both sides. Feel free to substitute with pork belly or shoulder if you prefer. Ensure the pork is fully cooked before proceeding.
Step 6
Once the pork is cooked, let it cool slightly, then cut it into bite-sized pieces (about 2-3cm). Add the sliced garlic to the pan and stir-fry it with the pork to release its fragrant aroma.
Step 7
While the pork and garlic are cooking, sprinkle 1 tablespoon of sugar evenly over the mixture in the pan.
Step 8
Stir-fry the ingredients until the sugar melts and lightly caramelizes, coating the pork and garlic. Be careful not to burn it; cook over medium heat until nicely glazed.
Step 9
When the pork and garlic are well-cooked, add the chopped green onions and 1 tablespoon of minced garlic. Continue to stir-fry. The aromatic blend of onion and garlic will help mask any porky smell and enhance the overall flavor.
Step 10
Carefully pour the pre-mixed soy sauce and mirin mixture along the edges of the pan. Allow it to bubble and come to a simmer; this step helps to deepen the sauce’s flavor.
Step 11
Now, add the prepared Cheongyang peppers. Stir-fry quickly over high heat to coat everything evenly with the sauce. This rapid cooking helps maintain the peppers’ crisp texture and vibrant color. Avoid overcooking, as they can become mushy.
Step 12
Finally, drizzle in 1 tablespoon of oligodang for a glossy finish and added sweetness. Sprinkle with sesame seeds for extra flavor and a pleasant texture. Give it a final quick toss, and your delicious stir-fried Cheongyang peppers with pork are ready!

The irresistible sweet and savory sauce coating the tender pork, combined with the fragrant and slightly spicy Cheongyang peppers, creates a flavor profile that appeals to everyone, young and old.
