The Secret to Deliciousness! Recreating Baek Jong-won’s Famous Spicy Ramyun from ‘Baek-sikdang’

Baek Jong-won's Spicy Ramyun

Inspired by Baek Jong-won’s ramyun recipe featured on the popular show ‘Baek-sikdang’ (Alley Restaurant), I decided to recreate it myself. I was curious about how a dish that was even sold on the show would taste. The result? A resounding ‘thumbs up!’ Baek Jong-won’s recipes truly never disappoint. The show presented both a mild and a spicy version, and I opted for the exhilarating, fiery spicy version. With a simple pre-made seasoning paste, you can achieve a rich, deep broth reminiscent of Jjamppong, right in your own kitchen.

Key Ingredients for Baek Jong-won’s Ramyun

  • 1 Ramyun packet (choose your favorite brand)
  • 2 slices of ham (cut into thick pieces)
  • 1 egg (cooked to your preference, soft or hard-boiled)
  • 1 handful of bean sprouts (for a refreshing crunch)
  • 0.5 cup chopped green onions
  • 1 tablespoon of special spicy seasoning paste

Spicy Seasoning Paste (Yields 4-5 servings)

  • 1 cup cooking oil (using a standard paper cup for measurement)
  • 0.5 cup minced garlic (using a standard paper cup for measurement)
  • 0.5 cup chopped green onions (using a standard paper cup for measurement)
  • 1 cup gochugaru (Korean chili flakes, using a standard paper cup for measurement; adjust for spice level)
  • 1 tablespoon doenjang (fermented soybean paste, for a savory depth)

Cooking Instructions

Step 1

1. Making the Special Spicy Seasoning Paste: First, prepare your chopped green onions and minced garlic. In a pot, heat 1 cup of cooking oil (measured with a paper cup) over high heat. Add the minced garlic (0.5 cup) and chopped green onions (0.5 cup). Sauté them carefully, stirring frequently to prevent burning, until they turn a nice golden brown and their aroma infuses the oil. This step is crucial for developing the deep flavor of the ramyun broth. Once they achieve a nice color, remove from heat.

Step 2

Transfer the infused 파 마늘 기름 (garlic-onion oil) to a bowl. Add 1 cup of gochugaru (Korean chili flakes, measured with a paper cup) and 1 tablespoon of doenjang. Mix everything thoroughly until well combined. This completes your delicious spicy seasoning paste! This batch makes about 4-5 servings, so you can store any leftovers in an airtight container in the refrigerator for future use. This paste is considered the foundation of the show’s ramyun recipe.

2. Cooking the Delicious Ramyun: In a pot, bring 500-550ml of water to a boil. Add 1 tablespoon of the prepared spicy seasoning paste and the ramyun soup packet, stirring to dissolve. Once the water is boiling vigorously, add your ramyun noodles, ham slices, bean sprouts, and chopped green onions. Cook until the noodles are perfectly tender, according to your preference. Your Baek Jong-won style spicy ramyun is now ready to enjoy! I tried this recipe with Shin Ramyun and Samyang Ramyun, and both turned out incredibly delicious, pairing wonderfully with the seasoning. For an extra touch, consider adding a fried egg as a topping.
