An Irresistibly Delicious Baek Jong-won Spam Mayo Kimchi Rice Bowl!
I previously shared Baek Jong-won’s Kimchi Fried Rice recipe. Today, let’s make the Spam Mayo Kimchi Rice Bowl featured in Baek Jong-won’s Cooking Secrets, described as so delicious you can’t stop after the first bite! Chef Baek himself mentioned it’s a flavor everyone knows and doesn’t require elaborate description. This dish is perfect for earning big points with kids or a significant other. Let’s get started!
Ingredients
- 4 Eggs
- 2/3 can Spam (approx. 200g)
- 1 cup well-fermented Kimchi (approx. 200g)
- 3 Tbsp Cooking oil
- 2 bowls Steamed rice
- 1 Tbsp Brown sugar
- 2 Scallions
- Mayonnaise, to taste
Cooking Instructions
Step 1
First, prepare all the ingredients. This recipe is for 2 servings. If you’re making 1 serving, halve all the ingredients. For garnish, scallions are used, but you can substitute with a little green onion, dried parsley flakes, or seaweed flakes if scallions aren’t available. It’s okay to omit them if you don’t have any. You’ll need about 1/3 can (approx. 100g) of Spam per serving. Luncheon meat or other canned ham products can also be used.
Step 2
Since this dish cooks quickly, warm up your rice and place it into serving bowls beforehand. We’ll be layering the ingredients directly onto the warm rice.
Step 3
Finely chop the well-fermented kimchi with scissors. If your kimchi is too sour, you can adjust the sugar amount or rinse it lightly with water before stir-frying.
Step 4
Finely chop the scallions or green onions that will be used for garnish. If you’re using parsley flakes or seaweed flakes, have them ready as well.
Step 5
Dice the Spam into small cubes, about 1cm in size. If they’re too small, they might break apart when cooked, so maintaining a moderate size is recommended.
Step 6
Crack the eggs into a bowl and beat them well with chopsticks or a whisk until the yolks and whites are fully combined, creating a smooth egg mixture.
Step 7
Heat a wide pan over low heat and add 3 tablespoons of cooking oil. Pour in the beaten egg mixture and stir continuously with chopsticks to create fluffy scrambled eggs. Cook until just set but still moist, then remove from heat.
Step 8
Arrange the prepared scrambled eggs around the edge of the rice in the serving bowl.
Step 9
In the same pan, add 1 tablespoon of cooking oil and add the diced Spam. Stir and pan-fry over medium heat until golden brown and slightly crispy. Frying until the surface is a bit crispy enhances the flavor.
Step 10
Place the well-fried Spam in the center of the rice, on top of the rice itself.
Step 11
Add the chopped kimchi to the pan with the remaining Spam drippings. Sprinkle 1 tablespoon of brown sugar over the kimchi. Stir-fry over medium heat until the kimchi softens and the sugar is well incorporated. Be careful not to burn the kimchi.
Step 12
Evenly spread the stir-fried kimchi over the rice, between the Spam and the scrambled eggs.
Step 13
Generously drizzle mayonnaise over the top, according to your preference. You can drizzle it in a zigzag pattern or create a decorative design.
Step 14
