Basic Ingredients- 1/3 cup rehydrated cut seaweed (approx. 30g)
- 1/2 cup beef (for soup, approx. 100g)
- 1 Tbsp minced garlic
- 7 cups water (1.4L)
Seasoning Ingredients- 3 Tbsp soup soy sauce (Guk-ganjang)
- 1.5 Tbsp anchovy fish sauce (Aekjeot)
- 2 Tbsp sesame oil
- 3 Tbsp soup soy sauce (Guk-ganjang)
- 1.5 Tbsp anchovy fish sauce (Aekjeot)
- 2 Tbsp sesame oil
Cooking Instructions
Step 1
First, prepare 1/3 cup of dried cut seaweed and soak it in cold water for about 15-20 minutes until fully rehydrated. Once the seaweed is softened, drain it in a colander, rinse thoroughly under running water several times to remove excess salt, squeeze out excess water, and set aside.
Step 2
Heat 2 Tbsp of sesame oil in a pot. Add 1/2 cup of beef and stir-fry over medium-low heat for about 3-4 minutes until the beef is browned and releases a savory aroma. Stir-frying the beef sufficiently enhances its flavor.
Step 3
Once the beef is partially cooked, add the rehydrated seaweed and stir-fry together. Continue stir-frying for about 1-2 minutes, then add 1 Tbsp of soup soy sauce and stir-fry to allow the seasoning to penetrate the beef and seaweed. Baek Jong-won mentions that seasoning at this stage makes the broth much richer.
Step 4
Pour 7 cups of water into the pot with the seasoned beef and seaweed. Add 1 Tbsp of minced garlic. Bring to a boil over high heat, then reduce to medium heat, cover, and simmer for about 10-15 minutes. This allows the flavors of the seaweed and beef to meld into the broth.
Step 5
After the soup has simmered sufficiently, it’s time to adjust the final seasoning. Add the remaining 2 Tbsp of soup soy sauce and 1.5 Tbsp of anchovy fish sauce, and mix well. Using both soy sauce and fish sauce adds umami and depth, creating a richer broth flavor. After seasoning, simmer for just 2-3 more minutes to allow the flavors to meld throughout the soup.
