The fantastic combination of potatoes and pork, enhanced by a sweet and spicy sauce, will have you finishing a bowl of rice in no time. Main Ingredients- 2 Potatoes
- 1/2 Onion
- 200g Ground Pork (or canned ham)
- 1 cup Green Onions (chopped)
- 2-3 Cheongyang Peppers (chopped)
Cooking Instructions
Step 1
First, peel the potatoes and cut them into large cubes, about 1.5 cm in size. If you cut them too small, they might mash completely later, so cutting them thickly is recommended. Chop the onion into similar-sized pieces, and thinly slice the green onions and Cheongyang peppers. If you like it spicier, feel free to add more Cheongyang peppers.
Step 2
Place the ground pork in a wide pot. If you’re using Spam or another type of canned ham, cut it into bite-sized pieces and add it.
Step 3
Arrange the potatoes, onion, green onions, and Cheongyang peppers (chopped in step 1) attractively over the pork. Now, add just enough water to cover the vegetables. Instead of adding too much water, simmering it down is the secret to bringing out the deliciousness of this potato stew.

Now it’s time to add all the seasoning ingredients. Add the minced garlic, doenjang, gochujang, coarse gochugaru, brown sugar, and soy sauce in order. Mix them well. The doenjang adds a savory depth, the gochujang and gochugaru provide spiciness, and the brown sugar balances it with sweetness, enhancing the overall umami. Adjust the amount of soy sauce to your preference.
Step 5
Cover the pot and simmer over medium-low heat. It’s crucial to cook until the potatoes are tender enough to be easily mashed with a chopstick. Mash the potatoes occasionally while letting the sauce thicken to a rich, stew-like consistency. This process allows the flavors of the potatoes to infuse into the broth, creating a deeper taste. Finally, add more chopped green onions and peppers and simmer briefly to complete this delicious potato stew!
