Cooking Instructions
Step 1
First, prepare 1 bowlful of dried shredded squid (Jinmichae). If the squid is too tough, gently rinse it a couple of times in cold water to soften it. Be careful not to rinse for too long, as this can prevent the seasoning from absorbing well. After rinsing, it’s crucial to drain the water completely using a colander. Remaining moisture can make the texture of the finished dish soggy.
Step 2
Place the drained dried shredded squid in a bowl. Add 2 Tbsp of mayonnaise and mix well. The key here is to thoroughly mix the squid by pressing it firmly with your hands to ensure the mayonnaise penetrates all the way through. Mayonnaise coats the squid, preventing the seasoning from separating and making it smoother.
Step 3
Now, let’s make the delicious seasoning mix. In a small pot or pan, combine 2 Tbsp Gochujang, 1 Tbsp Gochugaru, 1.5 Tbsp sugar, 2.5 Tbsp oligosaccharide syrup, 1 Tbsp minced garlic, and 5 Tbsp water. Mix well. Cook over medium-low heat, stirring, until the mixture comes to a boil. Once boiling, reduce the heat slightly and add the mayonnaise-coated dried shredded squid. Quickly toss to evenly coat the squid with the seasoning. Avoid cooking for too long, as this can make the squid tough. Once the seasoning is evenly distributed, turn off the heat. Let the finished seasoned squid cool slightly before serving and enjoy!
