Today, I’m thrilled to share a recipe for a spicy yet refreshing mushroom hot pot, perfect for this weather, using the secret techniques of our beloved culinary mentor, Baek Jong-won! This recipe is incredibly easy to follow and guaranteed to be delicious. It’s a dish that will warm your body and soul on a cold day with its rich mushroom flavors and deep broth.
Hot Pot Ingredients- 300g thinly sliced beef for bulgogi
- 2 king oyster mushrooms
- 3 shiitake mushrooms
- 1 pack (150g) enoki mushrooms
- 200g bunoki mushrooms (or oyster mushrooms)
- 1/3 carrot
- 1 green onion (scallion)
- 1/2 onion
Spicy Seasoning Paste Ingredients- 2.5 Tbsp soup soy sauce
- 1 Tbsp minced garlic
- 1/2 Tbsp doenjang (fermented soybean paste)
- 1 Tbsp gochujang (red chili paste)
- 3 Tbsp gochugaru (red chili flakes)
- 1 Tbsp sugar
- 2.5 Tbsp soup soy sauce
- 1 Tbsp minced garlic
- 1/2 Tbsp doenjang (fermented soybean paste)
- 1 Tbsp gochujang (red chili paste)
- 3 Tbsp gochugaru (red chili flakes)
- 1 Tbsp sugar
Cooking Instructions
Step 1
Let’s start by preparing the mushrooms! For the king oyster mushrooms, trim the ends, cut them in half lengthwise, and then slice thinly about 0.5cm thick. This will help them absorb the seasoning beautifully and improve their texture.
Step 2
For the shiitake mushrooms, carefully remove the tough stem ends with a knife. Then, slice them thinly, about 0.5cm thick, just like the king oyster mushrooms. The aromatic flavor of shiitake will add a wonderful depth to the hot pot.
Step 3
For the enoki mushrooms, trim off the root base with a knife. Then, gently pull them apart with your hands into manageable clumps. Try not to break them down too much, as they can become too soft when cooked.
Step 4
Bunoki mushrooms (or oyster mushrooms) should be torn apart by hand following their natural shape. Tearing them by hand helps to retain a pleasant chewy texture and allows them to release their flavor into the broth effectively.
Step 5
Prepare the carrot by slicing it about 0.5cm thick, into half-moon or flat shapes. Carrots add a lovely color and a refreshing crunch. Avoid slicing them too thinly, or they might break apart during cooking.
Step 6
Cut the green onion to a similar length as the carrots. Cutting them into larger pieces makes them easier to handle and eat later, while also infusing the broth with a refreshing essence. Slanting the cuts can make them look more appealing.
Step 7
Slice the onion into pieces about 0.5cm thick. The natural sweetness of the onion will contribute to a richer, smoother broth.
Step 8
Now, let’s prepare the beef. Lightly pat the bulgogi beef dry with paper towels to remove excess moisture. Then, cut it into bite-sized pieces. Cutting them too large might make them difficult to cook through evenly.
Step 9
Place the prepared beef into a pot along with 350ml of water. Begin to heat this mixture. This step is for creating the flavorful broth, so start heating over medium-high heat.

Once the beef starts to boil, add the seasoning paste ingredients: 2.5 Tbsp soup soy sauce, 1 Tbsp minced garlic, 1/2 Tbsp doenjang, 1 Tbsp gochujang, 3 Tbsp gochugaru, and 1 Tbsp sugar. Mix everything well to create the seasoning. Adding a touch of doenjang will give the broth a deeper, more savory flavor.
Step 11
Bring the seasoned beef mixture to a rolling boil. Continue to cook until the beef is fully cooked through. Skim off any foam that rises to the surface during boiling for a cleaner, clearer broth.

While the beef is cooking, arrange all the prepared vegetables and mushrooms attractively in your hot pot dish. Layering them by color will make the final dish look even more appealing.

Carefully transfer the cooked beef from the pot, along with its seasoned broth, to the center of the hot pot dish where you’ve arranged the vegetables. This placement enhances the visual appeal of the hot pot.

Finally, pour the flavorful broth used to cook the beef over the ingredients in the hot pot, ensuring it’s enough to cover most of the ingredients. Now, cover the pot and simmer over medium-low heat until all the ingredients are tender and the flavors have melded together.
