  • 1 bunch chives (approx. 150g)
  • 1/2 medium onion (approx. 70g)
  • 1 Korean chili pepper (optional)

Seasoning

  • 1 Tbsp gochugaru (Korean chili flakes, approx. 10g)
  • 1 Tbsp maesilcheong (plum extract, approx. 15ml)
  • 1/2 Tbsp sugar (approx. 5g)
  • 1 Tbsp fish sauce (anchovy or sand lance, approx. 15ml)
  • 1 Tbsp minced garlic (approx. 10g)
  • 1 pinch salt (approx. 1g)
  • 1 Tbsp sesame oil (approx. 15ml)
  • 1 Tbsp toasted sesame seeds (approx. 5g)

Cooking Instructions

First, let’s prepare the chives. Remove any wilted or dirty leaves and wash them thoroughly under running water to ensure they are clean. Also, prepare half an onion.

Thinly slice the prepared onion into julienne strips. Slicing them this way helps the dressing distribute evenly and improves the texture.

Cut the washed chives into approximately 5cm (2-inch) lengths. Cutting them into manageable pieces will make them easier to eat.
